🥘 Essential Ingredients for the Best Mushroom Gravy

A vibrant flatlay of fresh ingredients for vegan mushroom gravy, including sliced mushrooms, red onion, garlic, tamari, corn flour, cacao powder, vegetable stock, olive oil, and fresh sprigs of rosemary and thyme.

Each ingredient in this mushroom gravy plays a crucial role in creating its incredible depth of flavor and luscious texture. Here’s a closer look:

  1. Mushrooms: I typically opt for chestnut mushrooms due to their robust, earthy flavor and firm texture, which contributes significantly to the “meaty” essence of this vegetarian gravy. However, feel free to experiment with other varieties like cremini (baby bellas) for a milder taste, or even portobello mushrooms for an intensely rich and meaty profile. The key is to get them nicely browned to unlock their full umami potential. If you have any leftover mushrooms, consider making my Vegan Mushroom Risotto for another delightful meal.
  2. Tamari: This is a key player for umami and color. Tamari is a gluten-free alternative to soy sauce, offering a similar savory depth without the wheat content. It not only enhances the overall flavor profile but also helps achieve that desirable deep, rich brown color reminiscent of traditional gravy. Ensure you choose a high-quality tamari for the best results.
  3. Cacao Powder: Don’t be surprised to see this! Unsweetened cacao powder is my secret ingredient for adding an incredible depth of flavor and a rich, dark hue, mimicking the complexity of a beef-based gravy. It contributes a subtle bitterness and earthy note that perfectly balances the savory flavors, without making the gravy taste like chocolate. It’s a must-try for truly exceptional vegan gravy.
  4. Corn Flour (Cornstarch): This natural thickener is essential for achieving the perfect consistency. It ensures our gravy is naturally gluten-free and wonderfully smooth. When adding, it’s crucial to whisk it into the liquid thoroughly to prevent any lumps, guaranteeing a silky finish.
  5. Vegetable Stock: Using a good quality vegetable stock forms the flavorful base of our gravy. It’s far superior to plain water, infusing the sauce with a foundational savory taste. Opt for a low-sodium vegetable stock to better control the seasoning.
  6. Fresh Rosemary & Thyme: These two aromatic herbs are a match made in heaven for this gravy. Their robust, earthy, and slightly piney notes infuse the sauce with a fresh, vibrant aroma and sophisticated flavor that elevates it from good to extraordinary. Fresh herbs are highly recommended for their superior fragrance and taste, but dried alternatives can be used in a pinch (see tips for ratios).
  7. Olive Oil: Used for sautéing the vegetables and mushrooms, olive oil provides a good base for building flavor. You can easily substitute it with other neutral oils like avocado oil or rapeseed oil if you prefer.
  8. Garlic and Red Onion: These aromatic vegetables lay the foundational flavor for the gravy, providing pungency and sweetness when sautéed.
  9. Salt and Pepper: Essential for seasoning, allowing you to adjust the taste to perfection. Always taste and adjust as you go!

🔪 Step-by-Step Guide: How to Make Mushroom Gravy

Creating this delicious mushroom gravy is a simple and rewarding process. Follow these easy steps to achieve a rich, flavorful, and perfectly smooth sauce.

Finely chopped mushrooms, red onion, garlic, rosemary, and thyme arranged on a wooden chopping board, ready for cooking.

Step 1: Prepare Your Ingredients. Begin by roughly slicing your chosen mushrooms. Finely dice the red onion and mince the garlic cloves. Finally, roughly chop the fresh rosemary and thyme. Uniform cuts will ensure even cooking and release of flavors.

Sautéing chopped mushrooms, red onion, garlic, and fresh herbs in olive oil within a silver saucepan on a stovetop.

Step 2: Sauté the Aromatics and Mushrooms. Heat the olive oil in a pot over medium heat. Add the minced garlic, diced red onion, sliced mushrooms, chopped rosemary, and thyme. Season with a pinch of salt and pepper. Fry, stirring occasionally, for about 5 minutes until the mushrooms have softened and released their moisture, and the onions are translucent and fragrant. This step is crucial for developing a deep flavor base.

Step 3: Build the Gravy Base. Pour in the vegetable stock, tamari, and cacao powder. Stir everything together until well combined. Next, whisk in the corn flour thoroughly to prevent any lumps from forming. Bring the mixture to a gentle simmer and let it cook for about 10 minutes, or until it reaches your desired thickness, stirring occasionally. The gravy will thicken as it simmers and cools.

Step 4: Strain and Serve. For a silky-smooth gravy, place a fine-mesh sieve over a heatproof jug or bowl. Carefully pour the cooked gravy through the sieve, using the back of a spoon or a spatula to press down on the solids to extract all the flavorful liquid. Discard the solids, and your beautifully smooth, rich mushroom gravy is ready to serve! If you prefer a more rustic, chunky gravy, you can skip this straining step entirely.

👪 Mushroom Gravy: Frequently Asked Questions

Here are answers to some commonly asked questions about making this delicious Mushroom Gravy:

Can I prepare this mushroom gravy in advance?

Absolutely! This gravy is fantastic for preparing ahead, which is a huge bonus, especially during busy holiday seasons. If you plan to use it within a few days, simply store it in an airtight container in the refrigerator and gently reheat it on the stovetop when needed, adding a splash of vegetable stock or water if it’s too thick. For longer storage, allow the gravy to cool completely, then transfer it to a freezer-safe container and freeze for up to 3 months. Thaw completely in the refrigerator before reheating.

Which types of mushrooms are best for this recipe?

I personally find chestnut mushrooms (also known as cremini or baby bellas) to be ideal due to their availability, reasonable cost, and excellent nutty, earthy flavor that contributes wonderfully to the gravy’s depth. However, you can certainly experiment with other varieties. Portobello mushrooms will yield a much “meatier” and more intense flavor, while button mushrooms will offer a milder taste. A mix of different mushrooms can also create a complex and interesting flavor profile.

Do I have to strain the gravy?

No, straining is entirely optional and depends on your texture preference. Straining creates a super silky, smooth gravy, which many prefer for a refined presentation. However, if you enjoy a more rustic, chunky gravy with bits of mushroom and herbs, you can certainly skip this step. If you choose not to strain, I recommend finely chopping the onion, garlic, and herbs to ensure the gravy isn’t excessively chunky.

Can I use dried herbs instead of fresh ones?

Yes, you can absolutely use dried herbs if fresh ones aren’t available. Your vegetarian gravy will still be delicious! A general rule of thumb for substitution is to use one-third the amount of dried herbs compared to fresh. So, for every 1 tablespoon of fresh herbs, use 1 teaspoon of dried herbs. Remember that dried herbs are more concentrated in flavor.

How can I make the gravy thicker or thinner?

To make the gravy thicker, you can create a slurry by whisking an additional ½ to 1 tablespoon of corn flour with an equal amount of cold water. Slowly whisk this into the simmering gravy and cook for another minute or two until it reaches your desired consistency. To thin the gravy, simply whisk in a splash more vegetable stock or water until it flows as you prefer. Always add liquids gradually to avoid over-thinning.

What are some extra flavor boosters I can add?

For an even deeper flavor, consider adding a splash of red wine or balsamic vinegar during the sautéing stage (allowing the alcohol to cook off). A teaspoon of nutritional yeast can impart a subtle cheesy, umami note, while a tiny drop of liquid smoke can mimic a smoky, roasted flavor. A bay leaf simmered with the gravy and removed before straining can also add aromatic complexity.

💭 Expert Tips for Perfect Mushroom Gravy Every Time

  • Don’t Skip the Deglazing: After you’ve fried the onion, garlic, mushrooms, rosemary, and thyme, and before adding the full amount of vegetable stock, make sure to deglaze the pan. Add a small splash of the vegetable stock and use a wooden spoon or spatula to scrape up all the browned bits (fond) stuck to the bottom of the pot. These bits are concentrated pockets of flavor that will significantly enrich your gravy. Incorporating them ensures maximum depth and savory deliciousness.
  • Garnish for a Gourmet Touch: If you decide to strain your gravy for a smooth texture, set aside 2-3 pieces of sautéed mushroom before adding the liquids. You can quickly fry them again just before serving, then place them on top of your gravy as an elegant garnish. This simple step adds a visually appealing touch and reinforces the mushroom flavor, truly impressing your guests.
  • Optimize Your Stock Choice: While vegetable stock works beautifully, if you can find mushroom stock, feel free to substitute it in place of the vegetable stock. This will amplify the mushroom flavor, giving your vegan gravy an even more intense and earthy profile. If mushroom stock is unavailable, a good quality, low-sodium vegetable stock is still excellent.
  • Tamari vs. Soy Sauce – Know the Difference: For truly gluten-free gravy, it’s crucial to use tamari, not regular soy sauce. Traditional soy sauce contains wheat, making it unsuitable for gluten-intolerant guests. Always double-check labels to ensure you are purchasing tamari if catering to gluten-free dietary needs.
  • Taste and Adjust Seasoning: Always taste your gravy towards the end of the simmering process, before straining. Adjust salt and pepper as needed. Different brands of vegetable stock and tamari can vary in sodium content, so tasting is key to achieving the perfect balance of flavors.
  • Achieving the Right Consistency: If your gravy turns out thinner than desired after simmering, you can make a quick slurry with a little more corn flour and cold water, then whisk it into the hot gravy and simmer for another minute until thickened. If it becomes too thick upon cooling, simply whisk in a tablespoon or two of warm vegetable stock or water until it reaches your preferred consistency when reheating.

  • Vegan Shepherd’s Pie: Use it as a rich base or a topping for a hearty vegan shepherd’s pie.
  • Beyond the Roast: This gravy also makes a fantastic savory sauce for pan-fried tofu, tempeh, or even as a dipping sauce for homemade fries or potato wedges.

🥡 Preparing Ahead And Storing Your Mushroom Gravy

One of the best features of this vegan mushroom gravy is its excellent make-ahead potential, making your life significantly easier, especially when planning for busy holidays or weekly meal prep. Having this flavorful sauce ready to go means one less thing to worry about on a hectic cooking day.

Refrigeration: If you plan to use the gravy within 3-4 days, simply allow it to cool completely to room temperature after cooking. Transfer it to an airtight container and store it in the refrigerator. When it’s time to reheat, gently warm it on the stovetop over medium-low heat, stirring frequently. If the gravy has thickened considerably in the fridge, whisk in a tablespoon or two of vegetable stock or water until it reaches your desired consistency. Avoid boiling rapidly, as this can sometimes affect the texture.

Freezing: For longer storage, this gravy freezes beautifully for up to 3 months. Once the gravy has cooled completely, pour it into freezer-safe containers or even ice cube trays for convenient portioning. Seal tightly and place in the freezer. When you’re ready to use it, allow the gravy to defrost fully in the refrigerator overnight. Once defrosted, reheat it gently on the stovetop, just as you would with refrigerated gravy, adding a little liquid if needed to achieve the perfect flow and consistency. Freezing and reheating does not compromise its rich flavor or velvety texture, making it an excellent staple to have on hand.

Ingredients

  • 3 tbsp olive oil
  • 3 garlic cloves, crushed
  • 1 large red onion, sliced
  • 375 g chestnut mushrooms, sliced
  • 3 sprigs fresh rosemary, chopped
  • Large handful fresh thyme, chopped
  • 500 ml veg stock
  • 1 1/2 tbsp tamari, (gluten-free soy sauce) (22.5ml)
  • 2 tbsp corn flour, (16g)
  • 1 tbsp cacao powder, (8g)
  • Salt & pepper, to taste
Units provided are for Metric. For US Customary, approximate conversions are: 3 tbsp olive oil (1.5 fl oz), 3 garlic cloves, 1 large red onion, 13 oz chestnut mushrooms, 3 sprigs rosemary, large handful fresh thyme, 2 cups veg stock, 1.5 tbsp tamari, 2 tbsp corn starch, 1 tbsp cacao powder.

Instructions

  • Finely dice the onion, slice the mushrooms, crush the garlic, and finely chop the fresh rosemary and thyme. Prepare all your ingredients so they are ready to go when you start cooking.
  • Heat a small pot or saucepan over medium heat. Add the olive oil, then introduce the crushed garlic, diced red onion, sliced mushrooms, chopped rosemary, and thyme. Season with a pinch of salt and pepper. Fry these ingredients for about 5 minutes, stirring frequently, until the mushrooms have softened and started to brown, and the onion is translucent. Make sure to scrape any browned bits from the bottom of the pan to incorporate all flavors.
  • Pour in the 500ml vegetable stock, 1 ½ tbsp tamari, and 1 tbsp cacao powder. Stir everything together well until the cacao powder is fully dissolved and incorporated, contributing to a rich, dark color.
  • Now, whisk in the 2 tbsp of corn flour. It’s important to whisk vigorously to ensure there are no lumps, creating a smooth and even consistency as the gravy thickens.
  • Bring the mixture to a gentle simmer and continue to cook for roughly 10 minutes, or until the gravy has thickened to your desired consistency. Stir occasionally to prevent sticking.
  • Finally, for an ultra-smooth gravy, strain it through a fine-mesh sieve placed over a jug or bowl. Press down on the solids with the back of a spoon to extract all the delicious liquid. Discard the solids, and your rich, velvety mushroom gravy is ready to enjoy. Alternatively, serve unstrained for a rustic, chunky texture.

Notes

Top Tips for Success:

  • Deglazing the Pan: Don’t forget to scrape up all the browned bits from the bottom of your pot when adding the liquid. These “fond” bits are packed with concentrated flavor that will significantly deepen your gravy’s taste.
  • Garnish for Elegance: For a professional touch, save a few sautéed mushroom slices before straining the gravy. Briefly re-fry them and use them as a beautiful garnish when serving.
  • Mushroom Stock Boost: If available, using mushroom stock instead of vegetable stock will intensify the umami flavor of your gravy even further.
  • Gluten-Free Assurance: Always use tamari, not regular soy sauce, to ensure your gravy remains genuinely gluten-free for those with dietary restrictions.
  • Adjusting Consistency: If your gravy is too thin, whisk in a corn flour slurry (1 tbsp corn flour mixed with 1 tbsp cold water) and simmer briefly. If it’s too thick, gradually add warm vegetable stock until desired consistency is reached.

Make This Vegan Gravy In Advance:

  • Prepare the gravy as per the instructions, allow it to cool completely, then store it in an airtight container in the fridge for up to 3-4 days. Reheat gently on the stovetop, adding a splash of stock if needed.

Leftovers:

  • Any leftover gravy can be frozen for up to 3 months. Thaw thoroughly in the refrigerator and reheat gently, adjusting consistency with a little extra liquid if required.
