Refreshing Pea & Avocado Dip Recipe for Spring Gatherings

A light, simple and refreshing pea and avocado dip that’s perfect for barbecues, summer meals, or entertaining friends and family. It’s versatile—serve it with fish or chicken, add it to salads and burgers, dunk bread into it, or spread it on toast.

Refreshing Pea & Avocado Dip

Ingredients

  • 400 g fresh peas (frozen also work well)
  • 1 1/2 ripe avocados
  • Small handful fresh mint
  • 2 tbsp water
  • Large pinch salt and pepper

Instructions

  • Boil the peas until tender, then drain and rinse under cold water to cool them quickly.
  • Place the cooled peas in a blender, reserving a few whole peas for garnish if you like.
  • Add the avocado, fresh mint, water, salt and pepper to the blender and blend until smooth. Adjust the water to reach your preferred consistency.
  • Serve topped with extra mint, the reserved peas, a sprinkle of salt and pepper, and a drizzle of olive oil if desired.

Notes

If the dip is too thick, add more water a tablespoon at a time until you reach the desired texture.
