Instructions to make Mushroom stroganoff pasta bake

Ingredients
- 500 g mushrooms, (chestnut recommended)
- 1 red onion, diced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp paprika
- 1 can coconut milk, (full fat)
- ½ juice lemon
- handful fresh parsley
- 250 g uncooked pasta, (brown rice, gluten-free recommended)
Instructions

Slice the mushrooms and dice the onion and garlic.

Heat a non-stick pan with olive oil, add the mushrooms, onion and garlic, and fry until the mushrooms soften, about 5 minutes.

Stir in the mustard, paprika, coconut milk, lemon juice, parsley and raw pasta. Simmer for 5 minutes so the pasta begins to absorb the sauce.

Pour into an ovenproof dish and bake at 200°C (fan) / 390°F for 15 minutes. Serve warm.
