I teamed up with Harts of Stur to create these Autumn Applesauce Pancakes using their KitchenAid Artisan Power Plus Blender. This is a paid collaboration, but the recipe itself is simple, wholesome and perfect for crisp mornings.
The blender is the most powerful I’ve used and made the whole process effortless. I used it twice: first to turn oats into oat flour and blend the pancake batter, and then to quickly puree the cooked apples into a smooth applesauce. The cleaning function saved time and made switching between tasks easy.
Pancakes are one of my favourite weekend breakfasts, and these autumn applesauce pancakes have quickly become my top pick for fall and winter weekends. They feel comforting, fresh and seasonal.

The applesauce is incredibly simple—just apples, water and cinnamon. It adds a bright autumnal flavour that balances the natural sweetness of the pancakes and gives the dish a fresh, seasonal lift. You can also use the sauce for other recipes that call for applesauce.
I use the KitchenAid blender to make both elements of the recipe. We don’t use flour, so blending the oats creates oat flour for the batter. The apples only need a few seconds in the blender after cooking to become a smooth puree.

I like to top the pancakes with thin apple slices while frying; it adds flavour and a pleasant crunch. Despite being flour-free and without baking powder, these pancakes stay soft inside rather than becoming dense or chewy.

Autumn Applesauce Pancakes
Ingredients
- 200 g gluten free oats
- 200 ml unsweetened plant milk I use almond
- 1 large banana
- 1 apple, sliced
Apple Sauce Ingredients:
- 3 apples peeled and chopped
- 1 tsp cinnamon
- 3/4 cup water (180ml)
Instructions
- Peel and chop the apples for the sauce. Place them in a pan with 3/4 cup water, cover and simmer for about 10 minutes or until very soft.
- Meanwhile, make the pancakes: add the gluten free oats to a blender and blend until they become a fine oat flour.
- Add the banana and plant milk to the blender and blend into a smooth batter.
- Heat a little coconut oil in a frying pan. Pour in small amounts of batter to form pancakes and top each with sliced apple.
- Cook each side for a minute or two until golden and cooked through.
- Once the apples are soft, transfer them to the blender, add the cinnamon and blend into a smooth puree. Add maple syrup if you prefer a sweeter sauce.
- Serve the pancakes topped with the warm applesauce and enjoy.
