  • 1 large egg
  • Water (as needed, to reach 78g total liquid with egg)
  • ¼ cup peanut oil (or other high smoke point oil) For Frying

For the Vegetables:

  • 1 tablespoon peanut oil
  • 1 Baby Bok Choy, thoroughly cleaned and chopped
  • 2 green onions, finely chopped
  • 1 Cup Fresh Bean Sprouts
  • 2-3 cloves of fresh garlic, finely diced

For the Beef and Marinade:

  • ½ Pound Strip steak, fat trimmed and cross-cut into thin 1-2 inch strips
  • 2 Tablespoons Peanut Oil (for marinating and cooking beef)
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Cornstarch

For the Noodle Sauce:

  • 1 Tablespoon Cornstarch
  • ½ cup Beef Broth
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Oyster Sauce
  • Dash of Freshly Ground Black Pepper


Instructions

  1. Prepare the Beef: In a bowl, combine all ingredients from the ‘Beef’ section (strip steak, 2 tablespoons peanut oil, 2 tablespoons soy sauce, 1 tablespoon cornstarch). Mix well to coat the beef thoroughly. Place the bowl in the fridge and allow the beef to marinate while you prepare the noodles (approximately 1 hour 30 minutes).
  2. Start the Noodles (Dough): In a large mixing bowl, combine the bread flour and salt for the noodles.
  3. Prepare Liquid for Noodles: In a separate bowl, whisk together the egg and enough water to reach a total weight of 78 grams of liquid.
  4. Combine Dough Ingredients: Slowly pour the egg/water mixture into the flour and salt mixture, mixing until a shaggy dough forms.
  5. First Knead: Knead the dough in the bowl for 5 minutes. Do not add any additional water, even if it seems dry; continue kneading.
