Essential Ingredients for Cherry Tomato Pasta Sauce

Fresh ingredients laid out for making Cherry Tomato Pasta Sauce: cherry tomatoes, garlic, basil, lemon, and spices.
  • Spaghetti: The classic choice for this sauce. I used gluten-free spaghetti noodles to ensure the recipe is accessible to everyone. The long strands are perfect for coating generously with this rich sauce.
  • Olive Oil: Essential for sautéing and building the flavor base. It beautifully fries the tomatoes and garlic, allowing their aromas and tastes to meld together.
  • Cherry Tomatoes: The star of the dish! These small, sweet tomatoes burst when cooked, releasing an incredible, concentrated flavor that forms the heart of this amazing sauce. If you have extra, they are fantastic in my Mediterranean Vegetables recipe.
  • Garlic Cloves: A fundamental aromatic that provides a pungent, savory depth to the sauce, making it incredibly comforting and flavorful. Crushed garlic is my go-to for savory dishes, adding an irreplaceable richness. You’ll also love it in my One Pot Pasta recipe.
  • Chilli Flakes: These add a lovely, subtle kick, balancing the sweetness of the tomatoes with a pleasant warmth. Adjust the quantity to your preferred spice level. They also work wonders in my Tuna Pasta for an extra zing.
  • Paprika: Contributes a delicate sweetness and a beautiful, earthy depth of flavor, enhancing the overall profile of the tomato sauce.
  • Tomato Puree: Boosts the tomato flavor intensity and helps thicken the sauce, giving it a more robust and satisfying consistency.
  • Miso Paste: A unique ingredient that adds a profound umami flavor, similar to soy sauce but gluten-free. It’s the secret weapon that gives this cherry tomato pasta sauce an irresistible complexity and richness, transforming it into a delightful Miso Pasta.
  • Fresh Basil Leaves: Infuse the sauce with a slightly spicy, peppery, and aromatic freshness that is quintessential for any great tomato pasta. Added at the end, they wilt beautifully into the warm sauce.
  • Lemon Juice: A splash of fresh lemon juice brightens the entire dish, cutting through the richness and adding a zesty, invigorating lift to the sauce.
  • Salt & Pepper: Crucial for seasoning and balancing all the individual flavors, bringing them into perfect harmony.

Smart Substitutions

  • Spaghetti: Feel free to experiment with other pasta shapes. Penne pasta, orecchiette, fusilli, or even short pasta like farfalle would work wonderfully, each offering a different texture and way to hold the delicious sauce.
  • Olive Oil: While extra virgin olive oil offers the best flavor, any neutral oil with a higher smoke point, such as avocado oil or grapeseed oil, can be used for frying if olive oil isn’t available.
  • Cherry Tomatoes: Although cherry tomatoes are prized for their intense sweetness and quick bursting action, grape tomatoes can be used as a substitute in a pinch. They might be slightly less sweet but will still yield a delicious sauce.
  • Garlic Cloves: If fresh garlic isn’t on hand, you can substitute with 1 teaspoon of minced garlic (from a jar) or ¼ teaspoon of garlic powder for every clove. Adjust to taste.
  • Miso Paste: If miso paste is unavailable, you can achieve a similar umami depth by using a combination of tahini (for creaminess and earthiness) and a dash of soy sauce (ensure it’s tamari for gluten-free) along with a pinch more salt.
  • Lemon: Fresh lemon juice is always preferred, but bottled lemon juice can be used as a convenient alternative, though you might need slightly more to achieve the same brightness.

Exciting Variations

  • Spicy Kick: For those who love heat, significantly increase the amount of chilli flakes and paprika. You could also introduce a finely chopped fresh red chili or a generous sprinkle of red pepper flakes during the sautéing process.
  • Deluxe Veggie Boost: Elevate your pasta dish by adding more chopped vegetables. Consider sautéing finely diced bell pepper, zucchini, or even mushrooms alongside the cherry tomatoes. Top with toasted pine nuts for crunch or a sprinkle of nutritional yeast (for a cheesy flavor) and vegan parmesan for added richness.
  • Kid-Friendly Twist: Spaghetti is almost universally loved by children! To make it even more appealing, you can reduce the chilli flakes to a minimum or omit them entirely. A sprinkle of their favorite vegan cheese on top before serving often does the trick!

Step-by-Step: How to Make Cherry Tomato Pasta Sauce

Spaghetti cooking in a pot of salted boiling water.

Step 1: Cook the Pasta. Begin by bringing a large pot of generously salted water to a rolling boil. Add your spaghetti (or preferred pasta type) and cook according to package directions until al dente, usually about 10 minutes. The pasta should be firm to the bite but cooked through. Reserve about half a cup of pasta water before draining.

Cherry tomatoes quartered and garlic cloves crushed, ready for the sauce.

Step 2: Prepare Aromatics. While your pasta is cooking, quickly quarter the fresh cherry tomatoes. This helps them burst and release their juices more readily during cooking. Next, crush the garlic cloves; finely mincing them works well too, ensuring their potent aroma infuses the sauce.

Garlic and quartered cherry tomatoes sautéing in olive oil in a large pan, seasoned with salt and pepper.

Step 3: Sauté the Base. Heat a large skillet or pan over medium heat and add the olive oil. Once shimmering, add the crushed garlic and the quartered cherry tomatoes. Season with a generous pinch of salt and black pepper. Sauté for about five minutes, stirring occasionally, until the tomatoes have softened, blistered, and slightly browned, releasing their sweet juices.

Spices, tomato puree, and miso paste added to the pan with cherry tomatoes, followed by fresh basil leaves.

Step 4: Build the Flavor. To the softened tomatoes, add the chilli flakes, paprika, tomato puree, miso paste, and lemon juice. Stir vigorously until all ingredients are well combined and the sauce starts to thicken slightly. Finally, stir in the fresh basil leaves, allowing them to gently wilt into the warm, aromatic sauce, infusing it with their distinctive flavor.

Step 5: Combine and Serve. Once the pasta is perfectly al dente, lightly drain it, leaving a small amount of starchy water clinging to the noodles. Immediately add the cooked pasta to the pan with the cherry tomato sauce. Toss everything together vigorously until the pasta is thoroughly coated in the rich, flavorful sauce. If the sauce seems too thick, add a splash of the reserved pasta water to achieve your desired consistency. Serve hot and *bon appétit*!

Hint: For an extra spicy kick, don’t hesitate to increase the amounts of chilli flakes and paprika in Step 4. You can also add a small amount of red pepper flakes for even more heat.

Storing and Reheating Leftovers

This **homemade cherry tomato pasta sauce** is excellent for meal prep! If you have leftover sauce on its own, store it in an airtight container in the refrigerator for up to 3-5 days. If the sauce has already been mixed with pasta, it’s best consumed within 3 days to maintain optimal texture. For longer storage, this versatile tomato sauce freezes beautifully. Transfer it to a freezer-safe airtight container or bag, and it will keep for up to 6 months. When reheating, thaw frozen sauce overnight in the fridge. Gently warm the sauce in a pot or pan over low heat until simmering, adding a splash of water or vegetable broth if needed to restore consistency. Reheat pasta with sauce gently in a microwave or on the stovetop, ensuring it’s piping hot throughout. Avoid overcooking the pasta during reheating to prevent it from becoming mushy.

Frequently Asked Questions

Can you make pasta sauce from cherry tomatoes?

Absolutely! Cherry tomatoes are fantastic for making pasta sauce. Their inherent sweetness and tendency to burst when cooked release a concentrated, fresh flavor that forms the perfect base for a vibrant sauce. Simply fry them up with garlic, add your choice of spices, tomato puree, and a touch of miso paste, and you’ll have an incredibly easy and delicious homemade sauce that far surpasses any store-bought option.

Are blistered or baked cherry tomatoes better for tomato basil pasta?

While both methods yield delicious results, I personally prefer to blister cherry tomatoes on the stovetop for this recipe. Blistering involves quickly sautéing them in a hot pan, causing their skins to wrinkle and burst, releasing their juices and creating a similar intense flavor profile in a much shorter amount of time. If you opt for baking, roasting them in the oven with some olive oil and adding roasted garlic cloves will create a wonderfully sweet and mellow depth of flavor. Either way, the “burst” of the tomatoes is key!

Can you make tomato garlic pasta without alcohol?

Yes, absolutely! Many tomato pasta recipes, especially those inspired by Italian-American cuisine, might call for white wine or refer to “alla vodka” styles, but alcohol is by no means necessary for a fantastic pasta sauce. This recipe, for example, relies entirely on the robust flavors of fresh tomatoes, aromatic garlic, and a thoughtful blend of seasonings, with miso paste providing a unique umami depth, creating a wonderfully rich and flavorful sauce without any alcohol.

How do you thicken cherry tomato sauce?

Our **cherry tomato pasta sauce** naturally thickens as the tomatoes break down and the tomato puree concentrates. However, if you prefer an even thicker consistency for any tomato-based sauce, a quick and effective method is to create a cornstarch slurry. Mix equal parts cornstarch and cold water (e.g., 1 tablespoon cornstarch with 1 tablespoon water) until smooth. Slowly whisk this slurry into your simmering sauce and allow it to cook for another minute or two, stirring constantly, until it reaches your desired thickness. The natural reduction from cooking and the addition of tomato puree in this particular recipe generally make a separate thickener unnecessary.

A super easy homemade Cherry Tomato Pasta Sauce that you can make in around 12 minutes, packed with fresh, vibrant flavors!
Prep Time: 2 minutes
Cook Time: 10 minutes
Total Time: 12 minutes
Servings: 2

Ingredients

  • 250 grams spaghetti (I used gluten-free)
  • 2 tbsp olive oil
  • 300 g cherry tomatoes, cut into quarters
  • 2 garlic cloves, crushed
  • 1 pinch of chilli flakes
  • 1 tsp paprika
  • 5 tbsp tomato puree
  • 1 tbsp miso paste
  • 1 handful fresh basil leaves
  • 1 Juice of lemon
  • Salt & Pepper to taste

Instructions

  1. Place the pasta in generously salted boiling water and allow to cook for about 10 minutes, or until al dente according to package instructions.
  2. Meanwhile, chop the cherry tomatoes into quarters and crush the garlic cloves.
  3. Now, heat a large pan with the olive oil over medium heat. Add in the crushed garlic, chopped tomatoes, and a generous pinch of salt and pepper. Fry together for 5 minutes, stirring occasionally, until the tomatoes have blistered, softened, and slightly browned.
  4. Next, add the chilli flakes, paprika, tomato puree, miso paste, and lemon juice. Stir these ingredients until they are well mixed into the sauce. Then, add in the fresh basil leaves, allowing them to wilt down into the warm sauce.
  5. Once the pasta is cooked, lightly drain it (reserving a splash of pasta water if needed) and add it straight into the pan with the cherry tomato sauce. Stir vigorously until all the pasta is thoroughly coated in the sauce. Serve immediately.
