  • Chocolate: omit or substitute with butterscotch chips, raisins or your favourite mix-ins.

How to make Vegan Peanut Butter Cookies

Step 1: Preheat the oven to 180°C (350°F). Melt the coconut oil gently over low heat.

Step 2: In a large bowl combine the melted coconut oil, maple syrup, peanut butter and a pinch of salt. Mix until smooth.

Step 3: Stir in the plain flour and the chopped chocolate until a soft dough forms.

Step 4: Divide the dough into six equal portions, roll into balls and place them on a lined baking tray.

Step 5: Flatten each ball slightly with a fork or the bottom of a glass. Bake for 11 minutes at 180°C.

Step 6: Remove from the oven and let cool for 1–2 minutes. The cookies will be soft to the touch; cooling firms the exterior while keeping the centre tender.

Hint: For a gooey centre take them out when still slightly doughy; bake a couple more minutes if you prefer them crispier.

Ingredients 

  • 4 tsbp coconut oil, melted, roughly 60g
  • 4 tbsp maple syrup
  • 2 tbsp peanut butter, smooth or crunchy
  • 150 g plain flour, (I use gluten-free) roughly 1 cup
  • 1 pinch salt
  • 75 g chocolate, (I use dark) chopped

Instructions 

  • Preheat the oven to 180°C. Melt the coconut oil over low heat.
  • Combine the melted coconut oil, maple syrup, peanut butter and salt in a large bowl and mix.
  • Add the flour and chopped chocolate and mix until a soft dough forms.
  • Divide into 6 balls and place on a lined baking tray.
  • Press each ball down slightly with a fork or the bottom of a glass and bake for 11 minutes at 180°C.
  • Remove from the oven while still slightly soft and let cool for 1–2 minutes to set the edges while keeping the middle tender.
