How to make Chicken and Mushroom Pie

Step 1: Preheat the oven to 190°C (375°F). Cut the chicken into bite-size pieces.

Step 2: Slice the onion into thin half-moons and thinly slice the garlic.

Step 3: Heat 1½ tbsp olive oil in a large skillet. Add the chicken, season with salt and pepper, and cook until golden all over. Remove the chicken and set aside.

Step 4: In the same skillet, cook the onions for 4–5 minutes until soft. Add garlic and cook for about 30 seconds until fragrant.

Step 5: Add mushrooms and thyme, cooking for about 5 minutes until the mushrooms release their juices.

Step 6: Whisk the vegetable stock with flour until smooth, then add it to the skillet along with the cream and mustard. Simmer for 15–20 minutes until the sauce has thickened.

Step 7: Return the chicken to the skillet, combine well, then transfer the filling into a pie pan. Lay the puff pastry over the top, trim the edges, and make a few slits to vent steam. Brush with olive oil and bake for 30–35 minutes until golden. Allow to cool slightly before serving.
Hint: Ensure the chicken reaches at least 74°C (165°F) before serving.
