How to make Cauliflower Curry

Step 1: Break the cauliflower into florets, rinse, and set aside. Chop the onions, grate the ginger and finely chop the garlic.

Step 2: Heat olive oil in a saucepan over medium-high heat. Add cumin and mustard seeds and cook until they begin to pop.

Step 3: Add the onions and cook, stirring, for about 5 minutes until softened.

Step 5: Pour in the chopped tomatoes and coconut milk, stir to combine, then add the cauliflower. Bring to a boil, reduce the heat and simmer for about 15 minutes, until the cauliflower is tender but still holds its shape.

Step 4: Add the garlic, ginger, curry powder and chili powder to the pan and cook briefly until fragrant before adding the liquids.
Hint: To speed things up, roast or air-fry the cauliflower while you prepare the sauce, then combine them at the end for a slightly different texture and extra caramelised flavour.
Leftovers
Store leftover curry in an airtight container in the fridge for up to three days. Reheat gently on the stovetop or in the microwave; add a splash of water or coconut milk if the sauce has thickened.
Recipe FAQs
Reduce or omit the hotter spices like chili powder and choose a milder curry powder. Adding more coconut milk also mellows heat and balances the flavours.
Serve it with rice, naan bread, or a simple side salad to complete the meal.
