How to make Mushroom Alfredo

Instructions

- Heat 2 tbsp olive oil in a large frying pan. Add the chopped mushrooms and fry for about 5 minutes until softened and browned.
- While the mushrooms cook, add soaked cashews, 1 tbsp dried sage, ½ tsp paprika, 1 cup (250 ml) non-dairy milk, ½ tsp Dijon mustard (optional), a squeeze of lemon juice and a pinch of salt and pepper to a blender. Blend until smooth.
- Pour the sauce into the pan with the mushrooms, stir and heat through for 1–2 minutes. Do not cook longer; the sauce thickens quickly.
