Instructions to make Mushroom stroganoff pasta bake

Step 1: Slice the mushrooms, dice the red onion and mince the garlic.

Step 2: Heat olive oil in a skillet over medium heat. Add the mushrooms, onion and garlic, and cook until softened and browned, about 5 minutes.

Step 3: Add Dijon mustard, paprika, coconut milk, lemon juice, chopped parsley and the dry pasta. Stir to combine and simmer for 5 minutes to let the pasta start to absorb the sauce.

Step 4: Transfer the mixture to an ovenproof baking dish and bake at 200°C (fan) / 390°F for 15 minutes. Remove from the oven and serve warm with extra chopped parsley and a lemon wedge.

Ingredients 

  • 500 g mushrooms, (chestnut recommended)
  • 1 red onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • 1 can coconut milk, (full fat)
  • ½ juice lemon
  • handful fresh parsley
  • 250 g uncooked pasta, (brown rice, gluten-free recommended)

Instructions 

  • Slice the mushrooms and dice the onion and garlic.
  • Heat a non-stick pan with olive oil, add the mushrooms, onion and garlic, and fry until the mushrooms soften, about 5 minutes.
  • Stir in the mustard, paprika, coconut milk, lemon juice, parsley and raw pasta. Simmer for 5 minutes so the pasta begins to absorb the sauce.
  • Pour into an ovenproof dish and bake at 200°C (fan) / 390°F for 15 minutes. Serve warm.
