  • 500 g gluten free spaghetti , (I use brown rice spaghetti)
  • 370 g frozen peas
  • 2 handfuls fresh spinach

Cashew Carbonara Sauce

  • 200 g cashews, (soaked for 10 minutes in hot water)
  • 4 tbsp nutritional yeast
  • 2 tbsp olive oil
  • 2 tbsp water
  • 1 tsp dried sage
  • 1/2 tsp garlic powder, (or small garlic clove crushed)
  • 210 ml unsweetened plant-based milk, (I used almond)
  • 2 pinches salt
  • 4 pinches black pepper

Instructions

  • Firstly, soak your cashews in hot water to soften them for a creamy sauce.
  • Next, place your spaghetti into a large saucepan and bring it to a boil. Cook the pasta according to the package instructions until al dente.
  • A couple of minutes before the pasta is fully cooked, add the frozen peas to the saucepan and continue to boil for a further few minutes until tender.
  • Drain the soaked cashews and combine all the carbonara sauce ingredients (drained cashews, nutritional yeast, olive oil, water, dried sage, garlic powder, unsweetened plant-based milk, salt, and pepper) in a blender cup. Blend for approximately 2 minutes, or until the sauce is completely smooth and creamy.
  • Now, drain the cooked pasta and peas thoroughly and return them to the pot you boiled them in. Add the 2 handfuls of fresh spinach and stir until the spinach wilts into the warm pasta.
  • Lastly, pour the freshly blended creamy cashew carbonara sauce over the pasta mixture, stir everything through to coat completely, and serve immediately. Enjoy your delicious vegan carbonara!
