Ingredients to make Vegan Pasta Bake

How to make Vegan Pasta Bake

Step 1: Preheat the oven to 200°C. In a large casserole pot, bring water to a boil, add the pasta and a large pinch of salt, and cook until al dente following package instructions (around 8 minutes depending on the pasta).

Step 2: While the pasta cooks, prepare the vegetables: crush or chop the garlic, dice the red onion, slice the mushrooms and olives, and drain and rinse the black beans.

Step 3: Drain the pasta and return it to the same pot. Add the red onion, garlic, mushrooms, olives, spinach, herbs, black beans, a drizzle of olive oil, passata, salt and pepper. Stir everything until evenly combined.

Step 4: Top with the grated cheese and bake in the oven at 200°C for about 20 minutes, until the cheese is melted and golden.
Hint: If your pot is not oven-safe, transfer the combined pasta to an ovenproof baking dish, add the cheese, and bake as directed.
Leftovers
Store leftovers in an airtight container in the refrigerator for 3–5 days, or freeze for up to 3–4 months. Portion into individual containers before freezing for easy reheating. Reheat in the oven for best texture or use the microwave for a quick option.
