Why this recipe works

This Chicken Thigh Tray Bake with potatoes and colourful vegetables is an all-season favourite. Total hands-on time is minimal — most of the hour required is oven time — so you don’t need to stand over the stove. The chicken stays moist and the vegetables roast to tender, caramelised perfection.

It’s naturally gluten-free and dairy-free, making it suitable for many dietary needs.

Ingredients to make Chicken Thigh Tray Bake

Chicken Thighs Traybake Ingredients
  1. Chicken thighs – skin-on, bone-in recommended for juiciness (boneless works too).
  2. Olive oil – for roasting and crisping the skin.
  3. New potatoes – scrub and parboil before roasting.
  4. Cherry tomatoes – add bright, sweet flavour.
  5. Salt – to taste.
  6. Black pepper – a pinch for warmth.
  7. Paprika powder – mild smokiness; adjust to taste.
  8. Garlic powder – for savory depth.
  9. Red, green and yellow bell peppers – cut into wedges for colour and texture.
  10. Asparagus – trimmed; added near the end to keep it tender-crisp.
  11. Fresh thyme – leaves only, scattered over the tray.

See the recipe card below for exact quantities and full details.

Recipe FAQs

Can you put chicken straight on a baking tray?

Yes. Chicken cooks well directly on a lined or unlined baking sheet. Use parchment, foil or a silicone mat for easier cleanup if you prefer.

What should I serve with a Chicken Tray Bake?

This dish is great on its own, but you can serve it with rice, quinoa, or a simple green salad or some fresh bread to round out the meal.

Is it safe to bake raw chicken alongside fresh vegetables?

Yes. Cooking chicken and vegetables together is safe as long as the chicken reaches the recommended internal temperature.
