Super easy 4-ingredient Rosemary Roast Potatoes that are totally gluten-free & vegan friendly!

Ingredients

  • 2 kg Maris Piper potatoes
  • 5 tbsp olive oil
  • 4 sprigs fresh rosemary, (can swap for thyme)
  • Salt

Instructions

  • Firstly, pre-heat your oven to 200°C (390°F) and then peel and chop your potatoes into roughly equal-sized pieces.

  • Now place the chopped potatoes into a large pot of lukewarm water with 4 sprigs of fresh rosemary and a few generous pinches of salt. Bring the water to a boil.

  • Parboil the potatoes for about 12 minutes. Refer to the ‘Expert Tips’ section above to determine when they are perfectly tender but not overcooked.

  • While the potatoes are parboiling, pour 2-3 tablespoons of olive oil into a large baking dish or tray and place it in the preheated oven to get very hot.

  • Drain the parboiled potatoes, carefully removing just the rosemary stems (try to keep as many of the leaves as possible). Place the drained potatoes back into the empty pot, secure the lid, and give them a couple of firm shakes. This vital step helps to rough up their surfaces, which is key for getting them nice and crunchy.

  • Carefully remove the hot baking dish from the oven and transfer the roughed-up potatoes into it. You should hear them sizzling from the hot oil – this is a good sign!

  • Drizzle a good few glugs of additional olive oil over the potatoes, ensuring each piece is covered evenly, along with a good few more pinches of salt. Place the dish in the oven for an initial roast of 45 minutes.

  • After 45 minutes, remove the dish from the oven. Gently turn the potatoes to ensure even cooking and browning on all sides. Place them back in the oven for a further 45 minutes, or until they are deeply golden, incredibly crispy, and tender on the inside.
