How to make Smashed Potatoes

Step 1: Preheat your oven to 200°C (390°F). On a large baking sheet or in a baking dish, combine baby potatoes, garlic cloves (left in their skins), cider vinegar, olive oil, and a generous pinch of sea salt and black pepper. Toss to coat and bake for 45 minutes.

Step 2: Remove the potatoes and gently press each one with a fork, the bottom of a glass, or a potato masher until it splits and flattens. Return to the oven and bake for another 15 minutes to crisp the edges.

  • 1 kg baby potatoes
  • 2 tbsp cider vinegar
  • 2 tbsp extra virgin olive oil
  • 6 cloves garlic, in the skins
  • 100 g olives, optional

Instructions

  • Preheat the oven to 200°C (390°F). Toss baby potatoes, garlic (in their skins), cider vinegar, olive oil, salt and pepper in a large baking dish. Bake for 45 minutes.
  • Remove from the oven and gently press each potato until it splits. Return to the oven and bake for 15 more minutes to crisp the edges.
  • Finish with olives and fresh herbs if desired. Serve immediately.
