Step 3: Add drained lentils, tamari, and a generous pinch of salt and pepper. Sauté for about 5 minutes to let the flavours combine.

Step 4: Transfer the mixture to a food processor and pulse to a minced texture — aim for a coarse mince, not a paste.

Step 5: Tip the mix into a large bowl and fold in the flour. It’s fine if you still see streaks of flour. Set aside for 5 minutes to cool slightly.

Step 6: Roll out the puff pastry on a lined baking tray. Place the lentil mixture along one side and shape into a long log. Spread cranberry sauce on top if using, fold the pastry over and seal the edges with a fork so a seam runs along the side.
