  • 25 g cacao powder, (1/4 cup)
  • 1 tsp baking powder
  • 100 g vegan butter, melted
  • 4 tbsp maple syrup
  • 50 g vegan chocolate

Instructions

  1. Pre-heat your oven to 180°C (350°F). To a large mixing bowl, add 150g buckwheat flour, 25g cacao powder, and 1 tsp baking powder, and mix well. Now, add 100g melted dairy-free butter and 4 tbsp maple syrup, then mix again until a dough forms.
  2. Chop half of the (25g) dairy-free chocolate into small chips. Add these to the cookie mix and combine thoroughly. (Keep the other 25g of chocolate in larger chunks for topping).
  3. Shape the dough into large, round cookies and place them onto a baking tray lined with parchment paper. Press the leftover chocolate chunks into the top of each cookie. Bake at 180°C (350°F) for 12 minutes.
  4. Remove from the oven. The cookies will still be quite gooey in the center; this is expected. Allow them to cool on the baking tray for 3 minutes before transferring to a wire rack.
