Why this recipe works

This prawn stir fry is a quick, versatile dish that works all year round. A simple sauce brings out the natural sweetness of the prawns and the fresh crunch of the vegetables. Despite sounding like a restaurant-style dish, it’s straightforward to prepare — no marinade required. Stir fries are highly adaptable: switch proteins, swap vegetables, or serve with rice or noodles to change the meal to suit your preferences.

Ingredients to make Prawn Stir Fry

prawn stir fry ingredients laid out on a marble background.
  1. Sesame oil — light or toasted (toasted gives a stronger nutty flavour).
  2. White onion — thinly sliced for a mild savoury base.
  3. Garlic clove — thinly sliced for umami depth.
  4. Ginger — peeled and thinly sliced; peppery and slightly sweet.
  5. Green beans — fresh or thawed from frozen.
  6. Broccoli — roughly chopped for texture and colour.
  7. Prawns — raw or cooked; king prawns are ideal but any prawns will work.
  8. Tamari — a gluten-free soy alternative (use soy sauce if not gluten-free).
  9. Sweet chilli sauce — for sweetness and a touch of heat.
  10. Cornflour — to thicken the sauce slightly.
  11. Water — to loosen the sauce to the right consistency.

See the recipe card below for exact quantities.

Substitutions

  • Oils: Use olive or vegetable oil if you don’t have sesame oil, although the flavour will differ.
  • Vegetables: Swap or add snow peas, broccolini, shallots, zucchini, peppers, carrots, or spring onions.
  • Sauce: Use soy sauce in place of tamari; replace sweet chilli sauce with honey or maple syrup plus chilli flakes for adjustable sweetness and heat.

Variations

  • Spicy: Add sriracha and extra chilli flakes to the sauce.
  • Deluxe: Add a splash of oyster sauce or fish sauce for depth, or finish with a squeeze of lime and sliced green onions.
  • Kid friendly: Reduce or remove chilli, add a little brown sugar for sweetness, or substitute prawns with a preferred protein.

Step 5: Pour the sauce into the skillet and cook for 1–2 minutes until it slightly thickens and coats the prawns and vegetables. If the sauce becomes too thick, add a splash of water to loosen it.

Hint: If the sauce is too thick, add a splash of water to reach the desired consistency.

Leftovers

Store leftovers in an airtight container in the fridge for up to 2–3 days. Reheat gently in a skillet over low heat or in the microwave, adding a little water if the sauce has tightened. Prawns should only be reheated once. Freezing is not recommended for best texture.
