Essential Ingredients for Butternut Squash and Chickpea Curry
Crafting this flavorful curry relies on a selection of simple yet impactful ingredients. Each component plays a crucial role in building the dish’s incredible depth and texture.

- Butternut Squash: This star ingredient truly shines, offering a naturally sweet and creamy counterpoint to the vibrant spices. It’s a fantastic seasonal vegetable, brimming with vitamins, minerals, and fiber. While a fresh butternut squash will yield the best flavor, using pre-cubed squash is a convenient shortcut that significantly reduces prep time without compromising taste.
- Onion: The aromatic foundation of almost any great curry. A white onion provides a subtly sweet and sharp flavor base that harmonizes perfectly with the other spices. Red or yellow onions can also be used, each adding a slightly different nuance to the overall taste profile.
- Spinach: An excellent optional addition for a boost of nutrients and a beautiful splash of green. Fresh baby spinach wilts down effortlessly into the hot curry, adding a gentle earthiness without overpowering the main flavors. Kale or other leafy greens can also be incorporated for similar benefits.
- Yoghurt: Essential for achieving that luxurious, creamy texture that defines this curry. For a dairy-free and vegan option, coconut yogurt is my go-to, lending a delicate tang and enhancing the coconut notes. Traditional Greek yogurt works wonderfully too if you don’t require a dairy-free meal, adding a rich creaminess and subtle sourness.
- Chickpeas: These versatile legumes are a powerhouse of plant-based protein and dietary fiber, transforming this simple vegetable curry into a truly satisfying and filling meal. They add a delightful textural contrast with their soft, slightly chewy consistency.
- Mild Curry Powder: This is your secret weapon for creating a complex flavor profile without needing a vast collection of individual spices. A good quality mild curry powder is a carefully balanced blend of spices like turmeric, coriander, cumin, and fenugreek, offering a rich, warm base. It keeps the preparation simple and cost-effective.
- Paprika: Adding paprika deepens the curry’s color and introduces another layer of savory flavor. Opting for smoked paprika can infuse a subtle, warming smokiness that elevates the dish to the next level, complementing the other spices beautifully.
- Canned Chopped Tomatoes: These provide the necessary liquid, a pleasant acidity, and a touch of sweetness that forms the backbone of the curry sauce. They help to create a rich, well-rounded flavor profile.
- Garlic: A foundational aromatic, garlic offers a pungent, savory depth that is indispensable in almost any curry. It contributes a gentle spice and an undeniable boost of flavor, melding with the onions and other spices.
- Harissa Paste: My absolute hero ingredient for this particular curry! Harissa is a North African chili paste renowned for its complex flavor profile – a beautiful balance of heat, smokiness, and aromatic spices like caraway, coriander, and garlic. It imparts an incredible depth and warmth without being overwhelmingly spicy, making this a truly memorable dish. Once you try it, harissa paste is sure to become a cherished store cupboard favorite.

Smart Substitutions for Your Curry
One of the beauties of this butternut squash and chickpea curry is its adaptability. Feel free to experiment with these thoughtful substitutions to tailor the recipe to your preferences or what you have on hand, without sacrificing flavor or quality.
- Chickpeas: While chickpeas are fantastic for their texture and protein, this recipe is incredibly versatile and works beautifully with other white beans. Consider using creamy cannellini beans for a smoother texture or hearty butter beans for a richer mouthfeel. Both will absorb the curry flavors wonderfully and provide a similar nutritional boost.
- Spices: If you prefer to craft your own spice blend rather than using a pre-mixed mild curry powder, you have excellent options. You can create a rich aromatic base by combining individual spices such as turmeric, ground coriander, cumin, and a pinch of chili powder. For inspiration on ratios, check out the spice mix I use for my 15 Minute Chickpea Stew recipe. Additionally, a spoonful of garam masala added towards the end of cooking will infuse the curry with a deeply aromatic, warm finish, making it a truly delicious vegetable curry.
- Butternut Squash: If butternut squash isn’t available or if you simply fancy a change, cubed sweet potatoes make an excellent substitute. They offer a similar sweetness and creamy texture when cooked, absorbing the curry flavors beautifully. Other winter squashes like pumpkin or acorn squash would also work well, offering a slightly different flavor nuance.
- Coconut Yoghurt: To maintain the creamy consistency, you have several choices. Standard Greek yogurt is a classic option for those not needing a dairy-free meal. For a richer, more indulgent vegan curry, full-fat coconut milk or thick coconut cream can be used. These will impart a more pronounced coconut flavor and a luscious texture, making the sauce incredibly silky.
Exciting Variations to Customize Your Curry
This Butternut Squash and Chickpea Curry recipe is a fantastic canvas for culinary creativity. Here are some ideas to adapt it to different palates and occasions, from adding a fiery kick to making it extra special or appealing to the little ones.
- Spicy Enhancements: If you crave a bolder heat, it’s easy to dial up the spice. You can add an extra teaspoon of harissa paste for a more intense flavor and warmth. For those who love a fiery kick, consider incorporating a pinch of cayenne pepper, a finely chopped fresh green chili (like a serrano or jalapeño), or some dried chili flakes early in the cooking process to allow their heat to infuse the sauce. Remember to taste as you go to achieve your desired level of spice.
- Deluxe Touches for an Elevated Experience: To transform this comforting dinner into a gourmet delight, consider these additions:
- Just before serving, stir in a generous handful of fresh baby spinach or kale, allowing it to wilt gently into the hot curry. This adds a fresh burst of color and nutrients.
- Brighten the flavors significantly with a squeeze of fresh lime juice. The citrusy zest cuts through the richness of the curry and adds a refreshing tang.
- Finish with a sprinkle of freshly chopped coriander (cilantro) and a scattering of toasted cashews or flaked almonds for added texture and a nutty depth. These simple garnishes undoubtedly take this recipe to an entirely new level of deliciousness.
- Serve with fluffy basmati rice, quinoa, or warm, pillowy Naan bread to soak up every drop of the exquisite sauce.
- Kid-Friendly Adjustments: To ensure this delicious curry is enjoyed by everyone, including children sensitive to spice, adjustments are simple:
- Reduce the Harissa Paste: Start with a much smaller amount, perhaps a quarter or half teaspoon, or omit it entirely if necessary. The curry powder will still provide plenty of flavor without the heat.
- Increase Yoghurt: Adding a little extra coconut or Greek yogurt can help to temper any residual spice flavors, making the curry milder and creamier.
- Add Sweetness: A touch of natural sweetness, such as a teaspoon of maple syrup or a finely grated apple, can also make the flavors more approachable for young palates.
- Serve with Mild Sides: Offer with plain rice, cucumber sticks, or a dollop of extra yogurt on the side to cool any warmth.
Step-by-Step Guide: How to Make Butternut Squash and Chickpea Curry
Creating this flavorful and warming curry is a straightforward process, broken down into simple, manageable steps. Follow these instructions to achieve a perfectly cooked and incredibly delicious meal.

Step 1: Prepare the Butternut Squash. Begin by carefully peeling the butternut squash. A sturdy vegetable peeler works best for its tough skin. Once peeled, halve the squash, scoop out the seeds and stringy bits, and then cut the flesh into uniform 1-inch (2.5 cm) cubes. Uniformity ensures even cooking.

Step 2: Roast the Butternut Squash. Drizzle the cubed butternut squash with a tablespoon of olive oil, a pinch of salt, and pepper. Spread it in a single layer on a baking tray. Roast in a preheated oven at 200°C / 390°F for approximately 30 minutes, or until tender and slightly caramelized at the edges. Alternatively, for a quicker option, air fry at 205°C / 400°F for about 18 minutes. Roasting intensifies the squash’s sweetness and adds a lovely depth of flavor.

Step 3: Prepare Aromatics. While the squash is roasting, finely dice your onion and mince the garlic cloves. Precise dicing ensures that they cook down evenly and release their full flavor into the curry base.

Step 4: Sauté Aromatics and Spices. Heat a large non-stick frying pan or pot over a medium heat. Add a tablespoon of olive oil, then introduce the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion begins to soften and become translucent. Next, add the mild curry powder, paprika, and a pinch of salt and pepper. Stir continuously for another 1-2 minutes, allowing the spices to “bloom” and release their fragrant aromas. This step is crucial for developing the curry’s foundational flavors.

Step 5: Build the Curry Base. Into the pan, add the drained and rinsed chickpeas, the canned chopped tomatoes, and approximately 1/4 can of water. Hint: Use the empty tomato can to measure the water; this helps to capture any residual tomato juice, adding more flavor to your sauce. Stir in the harissa paste and the yogurt until everything is well combined and the sauce is smooth. Bring the mixture to a gentle simmer and let it cook for about 7 minutes, allowing the flavors to meld and the sauce to slightly thicken.

Step 6: Finish and Serve. After the 7-minute simmer, gently fold in the roasted butternut squash cubes into the curry sauce. If you’re including the optional spinach, add it now and stir until it just begins to wilt, which should only take a minute or two. Taste and adjust seasoning as needed, adding more salt or a squeeze of lime juice if desired. Serve your delicious Butternut Squash and Chickpea Curry hot, perhaps with rice or naan bread.
Storing and Enjoying Leftovers
This vegan curry recipe is truly a gift that keeps on giving, often tasting even better the next day as the flavors deepen and meld together. It’s an ideal candidate for meal prep, allowing you to enjoy healthy, homemade meals throughout the week with minimal effort. Properly storing your leftovers ensures they remain delicious and safe to eat.
- Refrigeration: Any leftover butternut squash and chickpea curry can be stored in the fridge for up to 3 days. Transfer the cooled curry to an airtight container to maintain its freshness and prevent it from absorbing other odors from the refrigerator. When ready to eat, reheat gently on the stovetop over a low-medium heat, stirring occasionally, until piping hot throughout. You may need to add a splash of water or vegetable broth to thin the sauce if it has thickened too much.
- Freezing: This recipe freezes beautifully, making it perfect for long-term meal planning. Allow the curry to cool completely before freezing. Portion it into individual freezer-safe containers or sturdy freezer bags, ensuring you leave a little headspace for expansion if using containers. Label with the date. The curry can be safely frozen for up to 2 months. To enjoy again, simply transfer the frozen curry to the refrigerator to defrost overnight. Once thawed, reheat as described for refrigerated leftovers, ensuring it reaches a safe internal temperature.
Having this delightful curry ready to go in the fridge or freezer is a fantastic way to ensure you always have a wholesome, flavorful meal just minutes away, reducing the temptation for less healthy options on busy days.

I’ve designed this recipe to be mildly spiced, ensuring it’s enjoyable for a wide range of palates. The single teaspoon of harissa paste provides a pleasant warmth rather than an overpowering heat. However, if you prefer your curry with more of a kick, you can certainly use a hotter curry powder, or add an extra teaspoon (or more!) of harissa paste to suit your preference. Feel free to experiment with chili flakes or fresh chilies for an extra fiery touch.
