Autumn Applesauce Pancakes

Ingredients

  • 200 g gluten free oats
  • 200 ml unsweetened plant-milk, I use almond (0.85 cup)
  • 1 large banana
  • 1 apple sliced

Apple Sauce Ingredients:

  • 3 apples, peeled and chopped
  • 1 tsp cinnamon
  • 3/4 cup water, (180ml)

Instructions

  1. Peel and chop the apple into cubes, place into a pan with 3/4 cup of water and simmer with the lid on for 10 minutes (or until the apple is very soft)
  2. Meanwhile make the pancakes by adding the gluten free oats to a blender and blend into a flour
  3. Now add the banana and milk and blend into a smooth batter
  4. To a pan add coconut oil and pour in a small amount of the batter and top with sliced apple
  5. Cook on either side for a minute or two
  6. Once the pancakes are cooked, clean the blender and add the cooked apples along with the cinnamon and blend into a puree (you can add maple syrup at this stage if you prefer a sweet flavor)
  7. Simply top the pancakes with the sauce and enjoy!
