Peanut Butter & Miso Roasted Aubergines: a visually stunning and delicious vegan dish

Why You’ll Adore These Roasted Aubergines

These Peanut Butter & Miso Roasted Aubergines are more than just a recipe; they are an experience. They embody a perfect blend of simplicity, profound flavor, and impressive presentation. Whether you’re a seasoned chef or a kitchen novice, this dish promises a rewarding culinary journey that results in a truly delicious and wholesome meal.

The Irresistible Fusion of Miso and Peanut Butter

The secret to this recipe’s incredible depth lies in its unique glaze. Miso paste, a fermented soybean paste, brings a rich, salty, and profoundly umami flavor that is characteristic of Japanese cuisine. It adds an incomparable savoriness that elevates the humble aubergine. When combined with creamy peanut butter, the glaze transforms into something truly magical. The peanut butter provides a nutty richness and a slight sweetness, creating a beautiful balance with the miso. This combination coats the aubergines in a luscious, slightly sticky layer that caramelizes perfectly in the oven, intensifying every bite. The resulting flavor profile is complex yet harmonious, offering a delightful interplay of salty, sweet, nutty, and savory notes that will tantalize your taste buds.

Aubergine: A Versatile and Nutritious Canvas

Aubergines, also known as eggplants, are a fantastic vegetable to work with. Their mild flavor and spongy texture make them an excellent absorber of other flavors, making them the ideal vehicle for our rich peanut butter and miso glaze. Beyond their culinary adaptability, aubergines offer a wealth of health benefits. They are low in calories and high in dietary fiber, which aids in digestion and helps maintain a healthy gut. They also provide essential vitamins and minerals, including vitamin K, vitamin C, vitamin B6, thiamine, niacin, magnesium, manganese, phosphorus, copper, and folic acid. Furthermore, aubergines are rich in antioxidants, particularly nasunin, which can protect brain cells from damage. Roasting them brings out their natural sweetness and creates a wonderfully tender interior, making them incredibly satisfying.

A Dietary-Friendly Delight for Everyone

This recipe proudly ticks many boxes for various dietary needs, making it a fantastic choice for almost everyone at your table. It is naturally gluten-free, relying on tamari instead of traditional soy sauce, ensuring that those with gluten sensitivities can enjoy it without worry. As a plant-based dish, it is completely vegan and dairy-free, suitable for those following a vegan lifestyle or avoiding dairy products. It’s also egg-free and refined sugar-free, using natural maple syrup for sweetness, aligning with a focus on whole, unprocessed ingredients. This makes the Peanut Butter & Miso Roasted Aubergines a wonderfully inclusive meal that doesn’t compromise on flavor or satisfaction.

Creative Serving Suggestions to Inspire You

The beauty of these roasted aubergines lies in their incredible adaptability. They can be the star of a meal or a supporting character, seamlessly fitting into various dining scenarios. Let your creativity guide you, and you’ll discover countless ways to enjoy this delicious dish.

  • A Wholesome Lunch: For a light yet fulfilling lunch, serve the warm aubergine halves over a bed of fluffy quinoa or brown rice. Add a side of steamed greens like broccoli or asparagus, or a fresh salad with a light vinaigrette. The combination provides a balanced meal rich in protein, fiber, and essential nutrients.
  • Elevate Your Salads: Transform an ordinary salad into something extraordinary by chopping the roasted aubergines into bite-sized pieces and adding them as a warm topping. They pair wonderfully with mixed greens, cherry tomatoes, cucumber, and a sprinkle of toasted nuts or seeds for added crunch. The savory-sweet notes of the aubergine will provide a delightful contrast to fresh vegetables.
  • A Perfect Dinner Side: These aubergines make an excellent accompaniment to a wide range of dinner mains. They can complement grilled tofu or tempeh, a hearty lentil loaf, or even a simple roasted chicken (if not adhering to a vegan diet). Their rich flavor adds depth to any meal, and their vibrant appearance brightens up the plate. Consider pairing them with a side of Asian-inspired noodles or a simple rice pilaf.
  • Appetizer or Tapas Style: Cut the roasted aubergines into thick slices and serve them on a platter as a sophisticated appetizer or part of a tapas spread. Garnish with extra fresh herbs and a drizzle of sesame oil for an elegant touch.
  • Sandwich or Wrap Filling: Dice the cooled aubergines and mix them with a dollop of vegan mayo or hummus for a flavorful sandwich or wrap filling. Add some crisp lettuce and shredded carrots for texture.

Your Step-by-Step Guide to Perfection

Creating these delightful aubergines is wonderfully straightforward, designed for efficiency without compromising on flavor. Follow these simple steps to achieve perfectly roasted, flavor-packed aubergines every time.

Prepping Your Aubergines with Care

Begin by pre-heating your oven to 200°C (390°F). While the oven heats, wash your aubergines thoroughly. Slice each aubergine lengthwise, creating two halves. For an extra layer of flavor and a beautiful presentation, I highly recommend charring the flesh side of the aubergine halves in a hot griddle pan for a few minutes until distinctive grill marks appear. This step is optional but adds a wonderful smoky depth. After charring (or if skipping this step), score the flesh of each aubergine half with crisscross lines. Be careful not to cut through the skin. This scoring technique is crucial as it allows the rich glaze to penetrate deeper into the aubergine, ensuring every bite is infused with flavor.

Crafting the Irresistible Glaze

The heart of this recipe is its incredibly flavorful glaze. In a small mixing bowl, combine all the glaze ingredients: miso paste (I prefer using brown rice miso for its rich, slightly sweet undertones), tamari (a gluten-free alternative to soy sauce that still delivers intense umami), pure maple syrup for natural sweetness, creamy or crunchy peanut butter (depending on your preference for texture), and a touch of water to achieve the perfect consistency. Whisk all these ingredients together vigorously until you have a smooth, well-combined glaze. The consistency should be thick enough to coat a spoon, but thin enough to spread easily over the aubergines.

Roasting to Golden Perfection

Once your aubergines are prepped and your glaze is ready, it’s time for the oven. Place the aubergine halves, flesh side up, onto a baking tray. Ensure there’s enough space between them for even cooking. Spoon or brush the prepared peanut butter and miso glaze generously over the scored flesh of each aubergine half, making sure to cover the entire surface. Once glazed, place the baking tray into your pre-heated oven and roast for approximately 25 minutes. The exact cooking time may vary slightly depending on your oven and the size of your aubergines. Look for the aubergines to become tender and slightly caramelized around the edges, with the glaze bubbling and turning a deep, rich golden brown. The aroma filling your kitchen will be absolutely divine!

Optional Enhancements for an Extra Touch

To elevate your dish further, consider adding a few garnishes just before serving. A sprinkle of fresh, finely chopped herbs, such as coriander (cilantro) or spring onions (scallions), adds a burst of color and freshness. Toasted sesame seeds provide a delicate crunch and a subtle nutty flavor that beautifully complements the existing ingredients. These small touches not only enhance the visual appeal but also add another layer of texture and taste to this already fantastic dish.

Beyond the Plate: The Health Benefits Unveiled

This dish is not only a feast for the senses but also a powerhouse of nutrition. Aubergines contribute vital fiber, aiding digestion and promoting gut health. Miso, a fermented food, is a fantastic source of probiotics, which are beneficial bacteria that support a healthy digestive system and can boost immunity. It’s also packed with essential minerals like zinc, manganese, and copper. Peanut butter, when chosen wisely (opt for natural, unsweetened varieties), provides healthy monounsaturated and polyunsaturated fats, as well as a good amount of plant-based protein, making this a satisfying and energy-sustaining meal. Maple syrup offers natural sweetness with trace minerals, making it a better alternative to refined sugars. Together, these ingredients create a meal that is both incredibly delicious and deeply nourishing.

A Peanut-Free Alternative: Exploring Nasu Dengaku

While the peanut butter in this recipe offers a unique creaminess and nutty flavor, it’s completely understandable that some may prefer a peanut-free option or simply wish to explore different taste profiles. If that’s the case, I highly recommend diving into the world of traditional Aubergine Miso, or Nasu Dengaku. This classic Japanese dish features beautifully roasted aubergines coated in a rich, savory-sweet miso glaze. The absence of peanut butter allows the pure umami of the miso to shine even more brightly, often complemented by a hint of mirin or sake for additional depth. It offers a cleaner, more traditional Japanese flavor profile that is equally satisfying and just as simple to prepare. It serves as a wonderful alternative, proving the incredible versatility of aubergines and miso in creating outstanding plant-based dishes.

Gluten-free, vegan, dairy-free, egg-free, refined sugar-free. A perfect healthy and flavorful dish.
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 4 people

Ingredients

  • 2 aubergines, sliced in half
  • 2 tsp miso paste, (I use brown rice miso)
  • 3 tsp tamari
  • 3 tsp maple syrup
  • 2 tsp peanut butter, (crunchy or smooth)
  • 2 tsp water
  • Chopped fresh herbs, optional
  • Pinch Sesame seeds, optional

Instructions

  • Pre-heat your oven to 200C (390°F).
  • Slice the aubergines in half lengthwise. For an optional smoky flavor, char the flesh side in a griddle pan before roasting.
  • Carefully slice crisscross lines across the flesh of each aubergine half. This scoring helps the glaze penetrate deeper for maximum flavor.
  • To prepare the glaze, combine the miso paste, tamari, maple syrup, peanut butter, and water in a small mixing bowl. Whisk until completely smooth.
  • Place the aubergine halves onto a baking tray. Evenly spread the prepared glaze over the scored flesh of each aubergine. Bake in the pre-heated oven for 25 minutes, or until tender and caramelized.

Notes

I like to serve mine topped with fresh chopped herbs and a sprinkle of sesame seeds for added flavor and visual appeal.
