  • 200 g gluten free self raising flour
  • 1 tsp cinnamon
  • 6 tbsp maple syrup
  • 4 tbsp coconut oil, melted
  • 130 ml unsweetened plant milk (eg almond)
  • 2 small carrots, grated

Instructions 

  • Preheat oven to 180°C (350°F).
  • In a large bowl, add the flour, cinnamon, maple syrup, melted coconut oil, plant milk and grated carrots. Mix until smooth.
  • Spoon the batter into lined cupcake tins and bake for 15–18 minutes at 180°C.
