Step 1: Crush the garlic, finely slice the onion and roughly chop the mushrooms.

Step 2: Heat a large shallow pan with a little oil. Add the garlic, onion and mushrooms with a good pinch of salt and pepper. Fry for about 5 minutes until the mushrooms brown and soften. Using a shallow pan helps the sauce reduce faster.

Leftovers

  • 4 garlic cloves
  • 2 400ml cans coconut milk
  • 2 tsp dijon mustard (good quality)
  • 2 tsp paprika
  • 1 lemon (juice)
  • Large handful fresh parsley
