Ingredients (serves 4)
Use these quantities as a guide and adjust to taste:
- 8 bone-in, skin-on chicken thighs (or 6 large thighs)
- 2–3 tbsp harissa paste, adjusted to heat preference
- 3 medium courgettes (zucchini), sliced into thick half-moons
- 400g ripe tomatoes, chopped (or a tin of chopped tomatoes if out of season)
- 2 cloves garlic, thinly sliced or minced
- 1 medium onion, finely sliced
- 2 tbsp olive oil
- Salt and freshly ground black pepper
- Fresh herbs to finish: parsley, coriander, or mint
- Cooked quinoa, couscous or rice, to serve
- Optional: a squeeze of lemon or spoonful of yogurt to balance the heat
Method
1. Preheat and prepare: Preheat your oven to 190°C (375°F) if finishing the dish in the oven. Pat the chicken thighs dry, season with salt and pepper, then rub each piece with the harissa paste so they are evenly coated.
2. Brown the chicken: In a wide, ovenproof skillet or deep sauté pan, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and cook until the skin is golden and crisp, 5–7 minutes. Flip and cook for a further 2 minutes, then remove the chicken and set aside.
3. Build the sauce: Reduce the heat to medium and add the sliced onion to the pan, cooking until soft and translucent. Stir in the garlic and cook for 30 seconds until fragrant. Add the courgettes and tomatoes, season with salt and pepper, and cook for 5–7 minutes until the courgettes start to soften and the tomatoes begin to break down.
4. Combine and simmer: Return the chicken to the pan, nestling it into the vegetable mixture so the thighs sit partly in the sauce. Spoon some sauce over the chicken. Cover the pan and either transfer to the oven for 20–25 minutes or simmer on the stovetop with the lid on for 25–30 minutes, until the chicken is cooked through and tender.
5. Finish and serve: Remove the lid for the last 5 minutes of cooking to help thicken the sauce if needed. Squeeze a little lemon or add a dollop of yogurt if you like a balancing tang. Scatter freshly chopped herbs over the top and serve the chicken and vegetables with fluffy quinoa to absorb the sauce.
Tips and Variations
- Prefer less heat? Start with 1 tablespoon of harissa and taste the sauce before adding more.
- No fresh tomatoes? Use a 400g tin of chopped tomatoes and reduce added salt accordingly.
- Make it leaner by using boneless, skinless chicken thighs or breasts—adjust cooking time so breasts don’t dry out.
- Add other summer vegetables such as bell peppers or aubergine for extra texture and flavour.
- To save time, use pre-cooked quinoa or a microwave grain pouch for quick assembly.
Storage and Reheating
Store leftover chicken and sauce in an airtight container in the refrigerator for up to 3 days. Reheat gently in a pan over low heat, adding a splash of water or stock to loosen the sauce if it has thickened. This dish also freezes well—divide into portions, freeze for up to 3 months, and thaw in the refrigerator overnight before reheating.
Serving Suggestions
This one-pot harissa chicken pairs beautifully with quinoa, couscous, or steamed rice. For a lighter meal, serve with a simple green salad and lemon wedges. A spoonful of natural yogurt on the side cools the heat and adds a creamy contrast to the spicy, smoky sauce.
With bold flavours and straightforward steps, this harissa chicken with courgettes and tomatoes is an ideal summer supper: colourful, comforting, and ready to impress with minimal effort.
