The Power of Four: Key Ingredients Explored

FREEE Corn Flakes: The Crunchy Base

For this recipe, I proudly use FREEE Corn Flakes. What makes them exceptional is not just their delicious taste, but also their simple, clean ingredient list (which I’ll show you shortly). They provide the perfect crisp texture that transforms into a wonderfully chewy consistency after baking, creating the classic flapjack feel.

FREEE Cereal box

FREEE is a brand dedicated to making gluten-free living easy and enjoyable. Their commitment extends beyond corn flakes; did you know they also offer their own range of vegan and gluten-free porridge oats? FREEE’s breakfast range truly makes starting your day with a healthy, organic, gluten-free, and vegan meal as simple as one, two, FREEE!

FREEE Cereal Ingredients

Bananas: Natural Sweetness & Binder

Ripe bananas are the cornerstone of these flapjacks. They contribute natural sweetness, eliminating the need for refined sugars. More importantly, their mashed consistency acts as a superb binder, holding all the ingredients together beautifully. Bananas also bring a host of nutrients, including potassium and essential vitamins, making these flapjacks a truly nutritious choice.

Peanut Butter: Protein Powerhouse & Rich Flavour

Ah, peanut butter – the star flavour! Besides its irresistible taste, peanut butter adds a significant protein boost and healthy fats to these flapjacks, increasing their satiety and nutritional value. For the best results, opt for a natural, unsweetened peanut butter to keep the sugar content low and enjoy the pure, nutty flavour. The creamy texture of peanut butter also helps bind the ingredients, contributing to the flapjacks’ moist and chewy consistency.

Cinnamon: A Touch of Warm Spice

A dash of cinnamon elevates the flavour profile, adding a warm, comforting spice that beautifully complements the sweetness of bananas and the richness of peanut butter. Beyond its delightful aroma and taste, cinnamon is known for its antioxidant properties, adding an extra health benefit to your delicious snack.

Effortless Preparation: From Bowl to Bake

Making these breakfast flapjacks couldn’t be simpler. The entire preparation process involves just a few easy steps, proving that wholesome eating doesn’t have to be time-consuming or complicated.

First, you’ll combine the bananas, peanut butter, and cinnamon in a mixing bowl. This creates a wonderfully fragrant and creamy base. The mashed bananas meld perfectly with the rich peanut butter, infused with the warm notes of cinnamon, preparing the ideal mixture to incorporate our hero ingredient.

Next, you’ll add the FREEE Corn Flakes to this delightful concoction. The corn flakes are carefully folded into the mixture, ensuring each flake is coated in the sweet and nutty goodness. This step is crucial for achieving that fantastic texture – a delightful chewiness from the baked mixture with satisfying little pockets of crunch.

Mixing Breakfast Flapjacks

Within just 5 minutes, your flapjack mixture will be perfectly combined and ready for baking. It truly is that simple!

Flapjack mix ready for baking

Before baking, make sure to line a square baking tray with parchment paper. This prevents sticking and makes for easy removal. Pour the mixture into the prepared tray and press it down firmly with a fork or the back of a spoon. Compacting the mixture ensures the flapjacks bake evenly, achieving a firm yet chewy texture that holds its shape beautifully once sliced.

Breakfast Flapjacks baking in oven

After a quick 15-minute bake, remove your golden flapjacks from the oven. The aroma filling your kitchen will be incredible! The key next step is to allow them to cool completely. This cooling period is essential as it allows the flapjacks to firm up, making them easy to slice into perfect squares without crumbling.

The Perfect Grab-and-Go Solution

Once cooled, these chewy, super filling, and utterly delicious flapjacks are ready to be enjoyed. They offer the ideal combination of flavour and substance, making them the perfect breakfast or snack for any time of day, especially when you’re on the go. Seriously, you just HAVE to try them to understand how good they are!

Meal Prep & Storage Tips

One of the best features of these 4-ingredient peanut butter flapjacks is their incredible suitability for meal prepping. You can easily make a batch at the beginning of the week and have wholesome breakfasts or snacks ready for days. Store them in an airtight container in the fridge for 2-3 days, and they’ll maintain their delicious chewiness.

For longer storage, these flapjacks also freeze beautifully. Simply wrap individual squares tightly in parchment paper and then in foil or place them in a freezer-safe bag. They’ll keep well in the freezer for up to a month. When you’re ready to enjoy one, simply thaw it at room temperature or warm it slightly in the microwave for a few seconds. This makes them an excellent option for always having a healthy snack on hand.
