📋About the recipe

This Lentil Wellington combines a crisp golden pastry with a hearty, flavour-packed filling of lentils, mushrooms and chestnuts. It looks like a show-stopping holiday centrepiece but is quick to assemble and bakes in about 20–30 minutes. The recipe is straightforward, uses widely available ingredients, and works well for vegans and vegetarians.

It’s a great option if you want a plant-based main for Christmas or any special roast. The texture and seasoning mean guests often find it just as satisfying as a traditional meat Wellington.

👨🏻‍🍳Why Make This Recipe

  • Easy: Minimal fuss and quick to prepare.
  • Flavourful: Rich umami from mushrooms, lentils and tomato puree.
  • Crunchy: A golden puff pastry gives a satisfying crust.
  • Comforting: A festive, familiar dish with a plant-based twist.
  • Shareable: Serves about 8 slices—perfect for a family meal.
  • Vegan & gluten-free: Use a gluten-free puff pastry to keep the dish both vegan and gluten-free.

🥘Ingredients to make Lentil Wellington

ingredient flatlay with mushrooms, lentils, chestnuts, mustard, tamari, garlic, tomato puree, gravy, rosemary, and thyme.
  1. Lentils – Provide body and protein; use pre-cooked or canned lentils, drained.
  2. Mushrooms – Use chestnut, cremini or portobello for a meaty umami flavour.
  3. Chestnuts – Add texture and a seasonal sweetness; walnuts can substitute.
  4. Tamari – A gluten-free soy sauce alternative; regular soy sauce works if gluten isn’t a concern.
  5. Mustard – Dijon adds depth and a gentle sharpness.
  6. Garlic – Freshly crushed for aromatic flavour.
  7. Tomato puree – Boosts umami and ties the filling together.
  8. Gravy granules – Intensify flavour; vegetable stock powder can replace them.
  9. Rosemary & thyme – Fresh herbs complement the filling; dried herbs can be used at a reduced quantity.
  10. Puff pastry – Choose gluten-free pastry if needed; many store-bought puff pastries are vegan.

💭Substitutions

Short on an ingredient? Try these swaps:

  • Chestnuts: walnuts or other nuts for texture.
  • Tamari: regular soy sauce if not gluten-free.
  • Gravy granules: vegetable stock powder.
  • Fresh herbs: use 1 tablespoon of each dried herb in place of fresh.

🔪How to make Lentil Wellington

Step 1: Preheat the oven to 200°C (390°F). Prepare the filling by frying the mushrooms, chopped chestnuts and tamari in a drizzle of olive oil until the mushrooms soften and start to brown.

Step 2: Stir in the drained lentils, crushed garlic, gravy granules, tomato puree, Dijon mustard and the chopped rosemary and thyme. Cook briefly to combine, then remove from the heat and let the mixture cool for 5–10 minutes.

Steps 3–5: Place one pastry sheet on a baking tray. Spoon the cooled lentil mixture into the centre, keeping it compact and leaving space at the edges. Aim for about 2 inches of height. Place the second pastry sheet over the filling and press the edges tightly to seal. Trim any excess pastry and, if desired, save it for decorative shapes.

Step 6: Use a fork to crimp the edges, lightly score the top to release steam and brush the surface with a little olive oil. Bake at 200°C (390°F) for about 20 minutes or until the pastry is golden. Let rest for 5–10 minutes before slicing with a serrated knife.

👪Recipe FAQ’s

Common questions about this Wellington:

Can I make this in advance of Christmas day?

Yes. It’s best served freshly baked, but you can prepare and store it in a sealed container at room temperature and reheat in the oven for 15–20 minutes before serving.

Which pastry do you recommend?

Use a puff pastry that matches your dietary needs. A gluten-free puff pastry keeps the recipe gluten-free; many puff pastries are also vegan.

Does it matter which mushrooms I use?

Choose meaty mushrooms like chestnut, cremini or portobello for the best texture and flavour.

💭Top Tips

  • Handle the pastry gently when covering the filling and when crimping the edges to avoid tearing.
  • Score the pastry lightly to allow steam to escape. Brushing with oil before scoring makes the cuts more defined; brushing after gives a subtler effect.
  • Let the Wellington rest 5–10 minutes before slicing so the filling firms up and cuts cleanly.
  • Use a serrated knife to slice without crushing the pastry.

🍽Serving Suggestions

Serve the Wellington with typical festive sides for a full holiday plate. Some favourites include vegan gravy, gluten-free Yorkshire puddings, cranberry sauce, and roasted or smashed Brussels sprouts. A rich mushroom gravy pairs particularly well with the lentil filling.

🥡Preparing ahead and storing

This Wellington can be prepared in advance. Cook it according to the recipe, store in a sealed container at room temperature, and reheat in the oven for 15–20 minutes until warmed through. For best results serve freshly baked when possible.
