10 Minute Spicy Pasta

Incredibly quick and easy spicy pasta sauce ready in 10 minutes — perfect for busy evenings.
Prep Time: 2 minutes
Cook Time: 8 minutes
Total Time: 10 minutes
Servings: 2 people

Ingredients

  • 250 g gluten free pasta
  • 3 tbsp olive oil
  • 250 g cherry tomatoes
  • 4 large garlic cloves, crushed
  • Handful of olives, chopped
  • Pinch of chilli flakes (adjust to taste)
  • 1 tsp paprika
  • Handful of fresh basil, chopped

Instructions

  1. Cook the pasta in boiling water for 10 minutes (or according to the packet instructions).
  2. While the pasta cooks, heat a large pan with the olive oil. Add the cherry tomatoes and fry for about 5 minutes. Leaving the tomatoes whole speeds up the sauce.
  3. Squash the tomatoes with a fork, then add the crushed garlic, chopped olives, chilli flakes and paprika. Cook together for a few minutes until the garlic is fragrant and the sauce has slightly thickened.
  4. Remove the pan from the heat and stir in the chopped basil until it wilts.
  5. Using tongs, transfer the cooked pasta directly from the pot into the sauce. Toss to combine and serve with extra fresh basil on top.

Notes

You can add cooked chicken or prawns for a non-vegan version. The chilli level is easily adjusted to suit your preference. This sauce freezes well for quick meals later.
