Step 4: Arrange aubergine slices on a baking tray, brush with olive oil and a pinch of salt, and roast at 180–200°C for about 10–15 minutes until tender and lightly browned.

Step 5: Blend the white sauce ingredients (cashews, nutritional yeast, basil, garlic, plant milk, olive oil, water, salt, and pepper) until very smooth. Adjust texture with a little water if necessary.

Step 6: Assemble the moussaka in layers: aubergine, tomato-lentil sauce, white sauce, and repeat. Reserve enough white sauce to finish the top layer.

- 250 ml unsweetened plant milk (almond)
- 2 tbsp olive oil

- Preheat your oven to 200°C. Dice the red onion, crush the garlic, chop the mushrooms and tomatoes, and slice the aubergine into long strips.
