Why this recipe works
This vegan shepherd’s pie delivers the comforting, warming flavours you want from a classic dish, while staying light and nutritious. Using canned green lentils gives the filling a meaty texture and adds protein, making it a satisfying meat-free alternative.
The recipe is straightforward and family-friendly: you can prep the veg, simmer the lentil sauce, and top with mashed potatoes for a filling dinner that will please vegetarians and meat-eaters alike. It’s also an economical option that stretches to feed four without breaking the bank.

How to make Vegan Shepherd’s Pie

Step 1: Preheat your oven to 200°C (fan 180°C). Prepare the vegetables as listed. Heat a large pot over medium heat, add olive oil, then fry garlic, onion, mushrooms, carrot and herbs for a few minutes until softened.
Add the tins of chopped tomatoes, drained lentils, frozen peas, tamari and veg stock powder. Stir to combine.

Step 2: Simmer the filling over medium–high heat for about 15 minutes, stirring every 5 minutes, until it thickens. Meanwhile, boil the potatoes (skins optional). Drain and mash with olive oil or vegan butter, salt and pepper.
Spoon the lentil mix into a deep baking dish, spread the mashed potato over the top and bake at 200°C for 30 minutes until hot and slightly golden. If using vegan cheese, sprinkle it on top and broil briefly to melt and brown.
Hint: Keeping potato skins on saves time and adds fibre and texture.
Leftovers
Store leftovers in an airtight container in the fridge for 3–5 days, or freeze for up to two months. Reheat in the oven or microwave; frozen portions may need longer to heat through or should be thawed first.
