Step 2: While the sauce is blending, prepare the broccoli, remaining green peppers, mangetout, and courgette. Heat a wok with 2 tbsp coconut oil and 2 tbsp tamari. Pour the blended green sauce into the wok with 1/2 cup warm water, stir to combine, then add the prepared vegetables. Simmer for 10–15 minutes until the vegetables are tender but still vibrant.

Ingredients

  • 3 garlic cloves
  • 1 red onion, roughly chopped
  • 2 lemongrass stalks, finely diced
  • 1 green chilli
  • 1 thumb-size piece fresh ginger, chopped
  • 1 lime, zest & juice
  • 1/2 tsp ground coriander
  • 1/2 tsp paprika
  • Handful fresh basil
  • Handful fresh coriander, including stalks
  • 1 can coconut milk
  • Handful spinach
  • 3 green peppers, roughly sliced (one for the sauce)
  • 1 head of broccoli
  • 150 g mangetout
  • 1 courgette, chopped
  • 2 tbsp tamari
  • Coconut oil
  • Salt and pepper

Instructions

  • Make the Thai green sauce: in a blender add one chopped green pepper, garlic, red onion, lemongrass, green chilli, ginger, ground coriander, paprika, lime zest and juice, basil, coriander (including stalks), spinach, coconut milk, and a pinch of salt and pepper. Blend on high until smooth.
  • Prepare the remaining vegetables: slice two green peppers, separate broccoli into florets, trim the mangetout, and chop the courgette.
  • Heat a wok with 2 tbsp coconut oil and 2 tbsp tamari. Add the blended green sauce and 1/2 cup warm water, stir to combine. Add the prepared vegetables and simmer for 10–15 minutes until tender but still vibrant. Adjust seasoning to taste and serve with rice, quinoa, or noodles.
