How to make Vegetarian Paella

Add the rice and 250 ml of vegetable stock, then stir. Cover and simmer for 8–10 minutes or until the rice absorbs the stock. Add another 250 ml and repeat until the stock is used and the rice is tender. Five minutes before the end, add the remaining lemon juice and remove the lid to allow the surface to dry slightly. Finish with chopped flat-leaf parsley and serve with lemon wedges for squeezing.
Leftovers
Store leftover paella in an airtight container in the fridge for 3–5 days. It can be reheated gently in a non-stick pan with a splash of water and a drizzle of oil over low heat, or enjoyed cold. If you added cooked meat or seafood, storage times may differ.

- 100 g artichokes (from a jar)
- 1 cup frozen peas
- 2 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp saffron threads
- juice of 2 lemons plus lemon wedges, to serve
- 350 g paella or risotto rice
- 1 litre vegetable stock
- handful chopped fresh flat leaf parsley, to serve (optional)
Instructions
- Dice the red onion, crush the garlic, slice the red peppers and half the cherry tomatoes.
- Heat 2 tbsp olive oil in a large, shallow casserole dish or pan over medium heat.
- Add the diced onion and garlic and cook for a few minutes until softened.
- Add the remaining vegetables, paprika, cayenne, saffron and the juice of one lemon. Fry for about 5 minutes until the pepper softens and the peas defrost.
- Add the rice and 250 ml vegetable stock, stir, cover and simmer for 8–10 minutes until the rice absorbs the stock. Repeat with another 250 ml of stock and continue until the stock is used and the rice is tender.
- Five minutes before the end of cooking, add the juice of the remaining lemon and remove the lid so the surface dries slightly. Serve with lemon wedges and chopped parsley.
