Key Ingredients for Your Delicious Vegan Thai Curry
Creating an authentic and flavorful Vegan Thai Curry relies on a thoughtful combination of fresh produce and aromatic spices. Here’s a closer look at the stars of our dish:

- Red Onion: Diced, red onions provide a sweet and pungent base, essential for building the initial layer of flavor in this aromatic curry.
- Garlic Cloves: Crushed garlic is a non-negotiable for most savory dishes. It infuses the curry with its distinct, robust aroma and taste.
- Fresh Ginger: Finely chopped, fresh ginger introduces a warm, spicy, and slightly citrusy zing that is characteristic of Thai cuisine and elevates the overall flavor profile.
- Red Chilli: For a pleasant kick, a deseeded and chopped red chilli is added. Deseeding helps to moderate the spice level, allowing you to enjoy the flavor without overwhelming heat.
- Lemongrass Stalk: A hallmark of Thai cooking, a lemongrass stalk, bashed to release its fragrant oils, imparts a unique citrusy, floral, and minty note. Remember to remove it before serving!
- Red Pepper: Roughly chopped red pepper adds not only a beautiful burst of color, maintaining the vibrant aesthetic of our tofu red curry, but also a sweet, crisp texture.
- Head of Broccoli: Cut into small florets, broccoli contributes a healthy dose of green, a satisfying crunch, and essential nutrients to this wholesome dish.
- Firm Tofu: Pressed and chopped into chunks, firm tofu is our plant-based protein powerhouse. Its porous texture allows it to absorb all the wonderful flavors of the curry sauce, making it incredibly tender and savory.
- Ground Coriander: A fundamental spice in many curries, ground coriander offers a warm, earthy, and slightly citrusy flavor that ties the aromatic elements together.
- Paprika: Sweet paprika adds a mild, peppery warmth and a lovely depth of color, enhancing the visual appeal and flavor complexity of this tofu Thai curry.
- Cayenne Pepper: For an extra layer of warmth and a gentle heat, cayenne pepper is incorporated. Adjust the amount to suit your spice preference.
- Coconut Milk: The heart of any creamy Thai curry, coconut milk provides a rich, velvety base that is naturally dairy-free. It’s perfect for vegans, those with dairy allergies, or anyone seeking a lush texture. (If you have leftover coconut fat, consider using it in my Vegan Mushroom Risotto!)
- Tamari: A gluten-free alternative to soy sauce, Tamari provides a crucial umami depth and savory balance to the curry, making it accessible for those avoiding gluten.
- Fresh Basil: Stirred in at the very end, fresh basil offers a fragrant, sweet, and peppery finish that brightens the entire red Thai curry with tofu.
- Mange Tout (Snow Peas): These crisp, bright green peas, still in their pods, add a delightful texture and an extra serving of healthy greens, contributing to the freshness of the curry.
Ingredient Substitutions to Customize Your Curry
This Vegan Thai Curry recipe is wonderfully forgiving and easily adaptable to your preferences or what you have available. Don’t hesitate to get creative with these substitution ideas:
- Vegetables: The beauty of this recipe lies in its versatility. Feel free to swap out or add any of your favorite vegetables. Great options include cauliflower florets, thinly sliced carrots, spinach, bok choy, green beans, mushrooms, or even sweet potato chunks for a heartier texture. Just remember to adjust cooking times for harder vegetables.
- Tofu Alternatives: While firm tofu is excellent for absorbing flavors, you can certainly experiment with other plant-based proteins. Tempeh (crumbled or diced), chickpeas, or various beans can be used. If you’re not strictly vegan, chicken, shrimp, or even beef would also work well, simply adjust cooking times accordingly. For those avoiding soy, consider increasing the amount of other vegetables or using a soy-free protein source.
- Spices: If you don’t have a specific spice, you can often approximate the flavor. For instance, a pinch of turmeric can add color, and a little chilli powder can stand in for fresh chilli if needed (though fresh is always best for flavor).
- Tamari: If gluten is not a concern, regular low-sodium soy sauce can be used in place of Tamari.
Recipe Variations for Every Taste
Once you master the basic Vegan Thai Curry, you’ll find endless possibilities for customization. Here are a few popular variations to try:
- Increase the Heat (Spicy Thai Curry): For those who love a fiery kick, there are several ways to amp up the spice.
- Keep the Seeds: Instead of deseeding your red chilli pepper, leave the seeds in. The seeds contain most of the capsaicin, which is responsible for the heat.
- More Cayenne: Increase the amount of cayenne pepper, adding a quarter or half teaspoon more at a time until you reach your desired spice level.
- Add Fresh Green Chillies: Incorporate a finely sliced green chilli alongside the red one for a different kind of heat.
- Chilli Flakes: A pinch of dried chilli flakes can also provide a quick boost of heat.
- Deluxe & Garnish Ideas: Elevate your presentation and flavor with simple garnishes.
- Fresh Lime: Serve with fresh lime wedges for squeezing. The acidity brightens the flavors and cuts through the richness of the coconut milk.
- Chopped Coriander: A generous sprinkle of fresh, chopped coriander (cilantro) adds a vibrant, fresh, and herbaceous aroma.
- Toasted Peanuts/Cashews: For extra crunch and richness, add a handful of crushed toasted peanuts or cashews just before serving.
- Crispy Shallots: Fried crispy shallots offer a delightful texture and sweet-savory flavor.
- Extra Basil: More fresh basil leaves can be added as a garnish for extra aroma and visual appeal.
- Kid-Friendly Version: Making this curry suitable for younger palates is easy.
- Reduce Spice: Drastically cut back or completely omit the red chilli and cayenne pepper. You can always add a pinch of chilli flakes to the adult portions later.
- Familiar Veggies: Ensure you include at least one vegetable that your children already enjoy. Carrots, sweet potatoes, and bell peppers are often popular choices and can be easily swapped in or increased.
- Smaller Chunks: Cut vegetables and tofu into smaller, bite-sized pieces to make them easier for kids to eat.
- Sweetness Balance: A tiny drizzle of maple syrup or agave can balance the flavors and make it more appealing to children who prefer sweeter profiles.
- Noodle Soup Version: For a comforting twist, try a Thai Curry Noodle Soup variant, perfect for a lighter but equally flavorful meal.
How to Make Vegan Thai Curry: Step-by-Step Guide
Creating this flavorful one-pot Vegan Thai Curry is incredibly simple. Follow these steps for a perfect meal every time:

Hint: Always remember to remove the lemongrass stalk before serving, as it’s meant for flavoring and not for eating.
Serving Suggestions for Your Thai Tofu Curry
This One-Pot Vegan Thai Curry is a meal in itself, but a few simple additions can truly complete the dining experience. Here are some of the best ways to serve your delicious curry:
- Classic Rice: The most popular accompaniment for Thai curry is rice. Brown rice is my personal preference for its nutty flavor and added fiber, but jasmine rice or basmati rice also pair beautifully. Cook your rice separately and serve the curry generously over it.
- Noodle Bowls: For a heartier meal, serve this curry with cooked rice noodles or even whole wheat noodles. The noodles soak up the creamy sauce, creating a satisfying texture.
- Gluten-Free Naan Bread: Don’t forget something to scoop up every last drop of that incredible sauce! Warm Naan bread is perfect for this purpose, adding a lovely soft and chewy element.
- Fresh Asian Salad: A crisp, refreshing Asian-inspired salad on the side can provide a wonderful contrast to the rich and warm curry. Think thinly sliced cucumber, shredded carrots, and a light vinaigrette.
- Extra Fresh Herbs: Garnish with additional fresh basil, coriander (cilantro), or even some mint leaves for an extra burst of freshness and aroma.
- Lime Wedges: Always serve with lime wedges. A squeeze of fresh lime juice just before eating brightens all the flavors and adds a zesty finish.
- Toasted Nuts: For a delightful crunch, sprinkle some toasted peanuts or cashews over the top.
- Chilli Flakes: Offer a small bowl of chilli flakes on the side for those who prefer an extra layer of heat.

Leftovers and Storage
Don’t worry about making too much – this Vegan Thai Curry often tastes even better the next day as the flavors have more time to meld and deepen! Here’s how to handle your leftovers:
- Refrigeration: Store any leftover curry in an airtight container in the fridge for 3-4 days. When reheating, you can warm it in a pot or pan over low heat until piping hot, or simply use the microwave. You may find that the sauce has thickened overnight, so feel free to add a splash of water or vegetable broth to loosen it to your desired consistency.
- Freezing: This Thai Red Curry freezes beautifully, making it an excellent option for meal prepping. Portion it out into individual freezer-safe containers or freezer bags once it has cooled completely. It can be stored in the freezer for up to six months. Thaw overnight in the refrigerator before reheating, and again, add a little liquid if needed to achieve the perfect sauce consistency.
Recipe FAQs: Everything You Need to Know About Vegan Thai Curry
Rice or noodles are the most classic accompaniments for this curry. I highly recommend brown rice for its nutty flavor and added fiber. A fresh, crisp Asian salad would also be a wonderful side dish. And for truly soaking up all that delicious sauce, some warm Naan bread is a must!
My go-to vegetables for this recipe are red pepper, broccoli, and mange tout (snow peas) for a vibrant and healthy mix. However, this curry is incredibly versatile! Other fantastic options include cauliflower florets, cubes of aubergine (eggplant), sliced carrots, zucchini, mushrooms, spinach, or bamboo shoots. Feel free to use whatever fresh vegetables you have on hand or prefer.
Traditionally, most Thai red curries are made with a red curry paste that often contains shrimp paste, making them not vegan. This recipe is specifically designed to be vegan-friendly, as it builds flavor from scratch using fresh vegetables, herbs, and spices, completely omitting any animal products or traditional curry pastes that may contain them. Always check labels if buying pre-made pastes!
Absolutely! Thai Red Curry freezes very well. For best results, allow the curry to cool completely, then portion it out into individual freezer bags or airtight containers. It can be safely stored in the freezer for up to six months. When you’re ready to enjoy it, simply thaw it in the refrigerator overnight and reheat gently on the stovetop or in the microwave.
For an even richer, more luxurious texture, you can use full-fat coconut milk. If you like a thicker sauce, let it simmer uncovered for a few extra minutes at the end, or you can stir in a tablespoon of cornstarch slurry (cornstarch mixed with a little cold water) during the last few minutes of cooking.
Firm or extra-firm tofu is ideal for this recipe. These types of tofu hold their shape well during cooking and have a better texture for absorbing the curry sauce. Make sure to press the tofu adequately to remove excess water; this step is crucial for achieving the best texture and allowing the tofu to soak up all the delicious flavors.

Vegan Thai Curry
A creamy, delicious Thai Curry made in just 20 minutes!
Ingredients
- 1 red onion, diced
- 2 garlic cloves, crushed
- Thumb sized piece of ginger, finely chopped
- 1 red chilli, deseeded and chopped
- 1 lemongrass stalk, bashed (remove before serving)
- 1 red pepper, roughly chopped
- 1 head of broccoli, cut into small florets
- 400 g firm tofu, pressed and chopped into chunks
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 2 400ml cans full-fat coconut milk
- 1 tbsp tamari
- Handful fresh basil
- Handful mange tout (snow peas)
- 1 tbsp cooking oil (e.g., coconut or vegetable oil)
Instructions
- Firstly, prepare all your vegetables and tofu. Dice the red onion, garlic, ginger, and red chilli (deseed for less heat). Bash the lemongrass stalk to release its flavor. Slice the red pepper and cut the broccoli into small florets. Press and chop the firm tofu into bite-sized chunks.
- Heat 1 tablespoon of cooking oil in a large pan or pot over medium heat. Add the diced onion, crushed garlic, chopped ginger, red chilli, ground coriander, paprika, cayenne pepper, and the bashed lemongrass stalk. Sauté for about 2-3 minutes until the aromatics are fragrant and the onion has softened.
- Next, add the chopped tofu, broccoli florets, and red pepper to the pan. Stir well to combine all ingredients with the spices and continue to fry for another 2-3 minutes.
- Finally, pour in the two cans of coconut milk, add the Tamari, fresh basil leaves, and the mange tout. Stir everything together gently. Bring the curry to a gentle simmer and cook on medium heat for approximately 8-10 minutes, or until the vegetables are tender-crisp and the sauce has slightly thickened. Before serving, remember to remove the lemongrass stalk.
