Why this recipe works

This recipe replaces traditional flour and refined sugar with oat flour and maple syrup for a lighter, naturally sweet crumble topping. By pulsing most of the oats into a fine oat flour and combining them with whole oats, butter (or vegan butter) and maple syrup, you get a crunchy, golden topping that holds together without becoming doughy.

Use it on berry crumbles, apple crisps, dutch apple pie, or sprinkle over warm ice cream with a spoonful of homemade jam. It’s versatile and enhances many fruit desserts with a satisfying oat crunch.

Ingredients to make Oat Crumble Topping

Ingredients to make Oat Crumble Topping.
  • Rolled oats – I used gluten-free oats, but regular rolled oats work fine.
  • Maple syrup – a natural sweetener that caramelizes nicely when baked.
  • Unsalted butter – vegan or dairy butter both work; cold butter helps keep the topping crumbly.

See the recipe card below for quantities and full details.

Substitutions

  • Maple syrup – Substitute with honey or agave syrup if preferred.
  • Butter – Use coconut oil or a different plant-based spread if you need a dairy-free alternative.

Variations

  • Deluxe – Stir in a pinch of cinnamon, chopped nuts, or mixed spice for extra warmth and texture.
  • Kid friendly – This topping is already kid-pleasing; try it on pancakes, muffins, or vanilla ice cream for a quick treat.

You can also use this oat mix to boost store-bought cakes or muffins—sprinkle on top before baking for added crunch.

Step 3: Scatter the crumble evenly over your fruit or dessert and bake until golden. A good guide is 180°C (360°F) for about 25 minutes, depending on your oven and the filling.

Tip: This topping isn’t limited to crumbles—try it on hot porridge, sweet breads, muffins, or serve warmed over ice cream.

Leftovers

Store uncooked topping in an airtight container in the fridge for up to 1–2 days. Cooked crumble keeps in the refrigerator for a couple of days and can be frozen for up to three months.

Recipe FAQs

Is it possible to make a crumble topping without flour?

Yes. Pulse oats into a fine oat flour and mix with whole oats to achieve the texture and binding you need without adding separate flour.

What are some good ways to use an oatmeal crumble topping?

Besides fruit crisps and crumbles, use it on oatmeal, muffins, sweet breads, pies, or as a crunchy ice cream topping.

Is it better to make a crumble topping with cold or melted butter?

Cold butter is best. It helps the topping stay crumbly and creates a better texture as it melts in the oven.

What is crumble topping made of?

Traditional crumble uses flour, sugar and butter. This version uses oat flour (made from blended oats), whole oats, maple syrup and butter for a simpler, naturally sweet alternative.
