How to make Spinach Soup

Step 2: Heat 2 tbsp olive oil in a pot over medium heat. Fry the onion and garlic for 5–6 minutes until soft and fragrant.

Step 3: Add the potatoes, toss to coat with oil, then pour in the vegetable stock. Bring to a boil, reduce the heat and simmer until the potatoes are tender (about 15 minutes).

Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, thinly sliced
  • 2 small potatoes, peeled, cubed
  • 750 ml vegetable stock
  • 120 g spinach
  • ¼ tsp nutmeg
  • Salt and pepper, to taste
  • Cream to serve, optional (I used soya)
