Substitutions

  • Olive oil – swap for another neutral oil like sunflower or canola.
  • Red onion – white or yellow onion can be used instead.
  • Garlic – substitute minced garlic or garlic powder if needed.
  • Spices – adjust to taste; onion powder, chili powder or extra black pepper work well.
  • Tamari – use soy sauce or liquid aminos as alternatives.
  • Black beans – white beans or lentils are acceptable substitutes.

Variations

  • Spicy – add chili powder, fresh chili or extra cumin for heat.
  • Deluxe – top with vegan mayo, BBQ sauce, fresh tomato, lettuce, pickles, sautéed onions or extra mushrooms. Toasted buns and a smear of garlic butter (vegan if needed) elevate the sandwich. Add vegan cheese or vegan bacon for an indulgent version.
  • Kid friendly – keep toppings simple and familiar to please picky eaters.

Step 6: Heat a pan over medium and coat the base with a neutral oil. Cook the patties until browned, turning carefully every few minutes to prevent burning. Cook low and slow until heated through, about 12 minutes. Serve on buns with mayo, lettuce, sliced tomato and red onion.

Hint: Cook over moderate heat to avoid burning while ensuring the patties cook through.

Recipe FAQs

How do you make a good veggie burger?

Making a great veggie burger starts with combining flavorful ingredients and a good binder. This recipe uses mushrooms for a savory depth, black beans for texture and protein, and breadcrumbs to hold everything together. Finish with your favorite toppings.

What mushrooms are best to make mushroom burgers?

Portobello and crimini are classic choices, but most fresh mushrooms work well. Because the mushrooms are chopped and cooked, pick whatever variety you enjoy for flavor and texture.

Can you make a vegetarian burger without egg?

Yes. This recipe uses breadcrumbs as a binder instead of egg. Use a vegan bread if you want to keep the recipe fully plant-based.

Are mushroom burgers healthier?

Replacing beef with mushrooms reduces saturated fat and calories while keeping rich flavor, making mushroom burgers a lighter, nutritious alternative.
