How to make Vegan Fishcakes

Step 1: Roughly chop the potatoes (no need to peel) and boil for about 10 minutes until soft.

Step 2: While the potatoes cook, finely chop the capers, red chilli, dill, parsley and crisp seaweed.

Step 3: Drain the potatoes and transfer to a large bowl. Add a couple of glugs of olive oil, a pinch of salt and pepper, and mash until mostly smooth.

Step 4: Stir in the capers, chilli, parsley, dill, chickpea flour, lemon zest and juice, and the chopped seaweed until evenly combined.

Step 5: Shape the mixture into cakes by hand. Spread breadcrumbs on a plate and press each cake into the crumbs to coat.

Step 6: Heat a frying pan with a generous splash of olive oil and fry the cakes for a couple of minutes on each side until golden and crisp. Alternatively, air fry at 200°C for about 12 minutes or bake at 200°C for 20 minutes.

Hint: You do not need to peel the potatoes for this recipe.

Leftovers

Store leftover fishcakes in an airtight container in the fridge for 2–3 days. They can be frozen for up to 3 months; cool completely, freeze in a tight container or bag, then thaw and reheat in a pan or oven until piping hot.
