Ingredients

  • 125 g buckwheat flour
  • 2 1/2 Tbsp maple syrup
  • 340 ml unsweetened almond milk
  • 1 1/2 Tbsp ground flaxseed

Instructions

  • Add all ingredients to a mixing bowl and whisk until smooth. Let the batter rest for a couple of minutes to thicken slightly.
  • Heat a nonstick pan over medium-high heat with a small amount of coconut oil. Pour in batter and tilt the pan to spread a thin, even layer.
  • Cook for a couple of minutes on each side until lightly browned. Flip carefully with a spatula as crepes are fragile.
