  • Olive oil — for frying (or use another neutral oil).
  • Garlic cloves — crushed for flavour.
  • Carrot — finely diced for sweetness and colour.
  • Red onion — finely diced.
  • Ginger — finely diced for warmth and spice.
  • Coriander, turmeric, paprika, chilli flakes, fennel seeds — the spice mix that builds the curry’s flavour.
  • Gluten-free flour — used to thicken the sauce (regular flour works if not gluten-free).
  • Lime juice — freshly squeezed for brightness.
  • Vegetable stock — the sauce base.
  • Vegan milk — unsweetened almond or any plant milk to add creaminess.
  • Gluten-free breadcrumbs — to coat the tofu (regular breadcrumbs are fine if not gluten-free).

How to make Vegan Katsu Curry

Step 1: Press the tofu to drain excess water (5–10 minutes). In a pot, heat olive oil and sauté garlic, carrot, onion and ginger for a few minutes. Add the spices, lime juice, gluten-free flour and vegetable stock, stir, reduce the heat and simmer for 10–15 minutes until the sauce begins to thicken, stirring every few minutes.

Step 2: Slice the pressed tofu into about eight “steaks.” Place vegan milk in one bowl and breadcrumbs in another. Dip each tofu slice in milk, then press into the breadcrumbs to coat well.

Step 3: Heat a frying pan with a good drizzle of oil and fry the crumbed tofu for a couple of minutes on each side until golden and crisp. For a lighter version, cook in an air fryer.

Step 4: Finish the sauce: if you want a smooth katsu, strain it through a sieve; otherwise serve it slightly chunky, depending on preference.

Hint: Press the breadcrumbs firmly into the tofu to ensure a crispy crust that stays on while frying.

Leftovers

The curry sauce stores well in the fridge for 3–4 days or in the freezer for up to three months. Fried tofu is best eaten fresh; leftover pieces can be kept in the fridge for a day or two and reheated in an air fryer or a dry pan for the best texture.

Vegan Katsu Curry

Ingredients

  • 400 g firm tofu, pressed
  • Olive oil
  • 4 garlic cloves, crushed
  • 1 large carrot, finely diced
  • 1 red onion, finely diced
  • Thumb-size piece of ginger, finely diced
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1/2 tsp paprika
  • 1/2 tsp chilli flakes
  • 1/2 tsp fennel seeds
  • 2 tbsp gluten-free flour (I used cornflour)
  • Juice of 1 lime
  • 500 ml veg stock
  • 100 ml vegan milk (I used almond)
  • Handful gluten-free breadcrumbs

Instructions

  • Press the tofu to drain any excess water (5–10 minutes).
  • In a pot, heat olive oil and fry the diced garlic, carrot, onion and ginger for a few minutes. Add the spices, lime juice, flour and veg stock, reduce to low and simmer for 10–15 minutes until it starts to thicken, stirring every few minutes.
  • Slice the drained tofu into 8 steaks. Place vegan milk in one bowl and breadcrumbs in another. Dip each tofu slice in milk, then press into the breadcrumbs so they adhere well.
  • Heat a frying pan with a generous amount of oil and fry the tofu for a couple of minutes on each side until golden and crispy. Alternatively, air-fry for a lower-oil option.
  • For a smooth sauce, strain the curry through a sieve, or leave it chunky if you prefer.

To Store: Leftover sauce keeps 3–4 days in the fridge. Fried tofu is best fresh; if stored, reheat in an air fryer or dry pan.

To Freeze: Sauce freezes up to three months. I don’t recommend freezing the fried tofu.

Tip 1: Make the recipe oil-free by air-frying the tofu.

Tip 2: If you can’t find gluten-free breadcrumbs, blitz stale gluten-free bread into crumbs and freeze them for later use.

Tip 3: This recipe works equally well with chicken if you prefer a non-vegan option.
