Step 2: Place the carrots, potato, garlic, ground coriander and stock into the slow cooker. Cook on high for 3½ hours.

Step 3: After cooking, add the fresh coriander and blend with a hand blender until smooth, about 30 seconds or until you reach your preferred consistency. Reserve a little coriander to garnish when serving.
