How to make Broccoli Pasta

Step 2: While the pasta cooks, trim the broccoli into small florets, chop the shallot and finely mince the garlic.

Step 3: Heat the olive oil in a skillet over medium-high heat. Add the shallot and garlic and sauté for about 5 minutes until soft and fragrant.

Step 4: With two minutes remaining on the pasta, add the broccoli to the pot so it cooks briefly. Drain the pasta and broccoli together, saving about ¾ cup of the cooking water.

Step 5: Pour the reserved pasta water into the skillet with the shallot and garlic. Stir in the cream, Italian herbs and parmesan. Cook for about 2 minutes to create a smooth sauce.

Ingredients 

  • 350 g pasta, desired shape
  • 1 ½ tbsp olive oil
  • 1 shallot
  • 1 large clove garlic
  • 1 head broccoli
  • ⅓ cup parmesan
  • 125 ml cream
  • 1 tsp Italian dried herbs
  • 1 tbsp lemon juice (optional)

Instructions 

  • Cook the pasta in a pot of salted boiling water according to package directions.
  • While it cooks, cut the broccoli into small florets, chop the shallot and mince the garlic.
  • Heat olive oil in a skillet over medium-high heat. Add shallot and garlic and sauté for about 5 minutes.
  • With two minutes left on the pasta, add the broccoli to the pot. Drain pasta and broccoli together and reserve ¾ cup of the pasta water.
  • Add the reserved pasta water to the skillet, then stir in the cream, Italian herbs and parmesan. Cook for about 2 minutes to form a sauce.
  • Toss in the drained pasta and broccoli until evenly coated with the sauce. Serve immediately.
