The process involves simply coating the salmon with the luscious cranberry sauce and letting your oven do the rest. It’s the perfect solution for a stress-free Christmas dinner that tastes gourmet without the fuss.
- Minimal Ingredients, Maximum Flavor: You truly only need three core ingredients to bring this incredible dish to life: fresh salmon, cranberries, and maple syrup (plus water and a pinch of salt for the sauce). If you’ve prepared your cranberry sauce in advance, it boils down to just two main components! This focus on quality, fresh ingredients ensures a pure and powerful flavor profile that stands out. It’s also a brilliant recipe for using up any leftover cranberry sauce you might have from other holiday preparations.
- Time-Saving Elegance: In just 35 minutes from start to finish, you can have a beautiful and delicious meal on the table. This quick turnaround is invaluable during the busy holiday season, allowing you to spend less time in the kitchen and more quality moments with your family and guests. This recipe uses maple syrup as a natural sweetener in the cranberry sauce, eliminating the need for any added refined sugars. Furthermore, all ingredients are naturally gluten-free, making it an excellent and inclusive option for guests with dietary restrictions, ensuring everyone can enjoy a delicious and wholesome meal.
Ingredients for Baked Christmas Salmon
The beauty of this Christmas Salmon recipe lies in its simplicity, relying on just a few high-quality ingredients to create a truly spectacular dish. While the recipe highlights three main components, don’t forget the essential staples of water and a pinch of salt for the cranberry sauce.

- Salmon Fillet: For a truly impressive presentation and enough to serve a holiday crowd, I recommend a generous 1kg fresh side of salmon, ideally sourced from a trusted fishmonger. Look for firm, bright pink flesh with no discoloration. Salmon is a nutritional powerhouse, rich in Omega-3 fatty acids, which are fantastic for heart and brain health. Using a large fillet ensures even cooking and a beautiful centerpiece. If a whole side isn’t available, individual fillets will work just as well; simply adjust baking time accordingly.
- Fresh Cranberries: These festive berries are typically in season from mid-September through mid-November, making them readily available in stores throughout November and December, just in time for holiday cooking. Their tartness is essential for balancing the richness of the salmon and the sweetness of the maple syrup. You can usually find them in major supermarkets like Waitrose or even frozen options in Tesco, ensuring year-round availability. Local green grocers are also a great source during the Christmas period. Frozen cranberries work perfectly as a substitute; just ensure they are not thawed too much before making the sauce.
- Maple Syrup: This natural sweetener is key to keeping the cranberry sauce refined sugar-free and infusing it with a unique, earthy sweetness that elevates the flavor far beyond many store-bought or sugar-laden alternatives. Opt for pure maple syrup for the best results. Its nuanced flavor pairs wonderfully with both cranberries and salmon, creating a sophisticated glaze. Honey can be used as an alternative if maple syrup is unavailable, offering a slightly different but equally delicious sweetness.
- Water & Salt: These kitchen staples are crucial for preparing the cranberry sauce, helping the cranberries soften and allowing their flavors to meld beautifully. A pinch of salt enhances all the other flavors.
Serving Suggestions
This Cranberry Sauce Baked Salmon is a star on its own, but it truly shines when paired with the right accompaniments. Here are some of my favorite recipes to create a complete and unforgettable holiday meal:
- Crispy Roasted Vegetables: Alongside the salmon, consider roasting a medley of seasonal vegetables such as my Smashed Brussels Sprouts, parsnips, carrots, or asparagus. Their earthy flavors and textures provide a delightful contrast to the rich salmon and tangy cranberry sauce.
- Perfect Roast Potatoes: No holiday roast is complete without perfectly crispy potatoes! Try my Rosemary Infused Roast Potatoes for a fragrant and comforting side that absorbs all the delicious pan juices.
- Fluffy Grains: A simple side of quinoa, brown rice, or wild rice can add a wholesome, gluten-free element that soaks up the extra cranberry sauce beautifully.
- Fresh Green Salad: A light, refreshing green salad with a simple vinaigrette can cut through the richness of the meal, offering a palate cleanser and a burst of freshness.
- Gluten-Free & Vegan Yorkshire Puddings: If you’re hosting a grand Christmas feast and want to go all out, my Gluten-free & Vegan Yorkshire Puddings are a fantastic, unexpected addition that will truly impress.
Remember, the goal is to create a harmonious spread that celebrates the festive flavors and textures of the season. Don’t hesitate to mix and match to find your perfect holiday plate!
How to Make Baked Christmas Salmon
Creating this stunning Cranberry Sauce Baked Salmon is surprisingly straightforward, making it an ideal recipe for both novice and experienced cooks. Follow these simple steps for a dish that tastes and looks like it took hours, but only takes minutes!
Step 1: Crafting Your Cranberry Sauce
The secret to this recipe’s incredible flavor starts with a quick and easy homemade cranberry sauce. Begin by adding your fresh cranberries, maple syrup, water, and a pinch of salt to a medium-sized pot. Place it over medium heat and bring the mixture to a gentle simmer. Allow it to simmer for about 3-5 minutes, or until the cranberries have visibly softened and started to burst. Once soft, use a fork to gently squash the cranberries to your desired consistency – some prefer a chunkier sauce, while others like it smoother. Continue simmering for another 5 minutes, stirring occasionally, until the sauce thickens slightly to a glaze-like consistency. This process not only cooks the cranberries but also allows the flavors to meld beautifully, creating a rich, tangy, and sweet sauce.

Step 2: Coating the Salmon
Once your cranberry sauce is ready, it’s time to prepare the star of the show: the salmon fillet. Place your salmon fillet on a clean surface or directly into your baking dish lined with baking paper. Generously spoon the warm homemade cranberry sauce over the entire surface of the salmon. Ensure it’s completely covered, allowing the vibrant sauce to cling to every part of the fish. This luscious coating will not only infuse the salmon with incredible flavor but also protect it from drying out during baking, resulting in a perfectly moist and tender finish.

Step 3: Baking to Perfection
Preheat your oven to 200°C (390°F). Line a large baking tray or dish with baking paper for easy cleanup. Carefully transfer the salmon fillet, coated with the cranberry sauce, into the prepared baking dish. For an even more convenient meal, consider adding some vegetables to roast alongside the salmon, such as Brussels sprouts, broccoli florets, or even sprigs of fresh rosemary for added aroma. Place the dish in the preheated oven and bake for approximately 20 minutes. The exact cooking time may vary slightly depending on the thickness of your salmon fillet, but 20 minutes is a good starting point for a 1kg side. The salmon is done when it easily flakes with a fork and reaches an internal temperature of 62°C (145°F).

Once removed from the oven, your kitchen will be filled with an incredible aroma. The salmon emerges beautifully golden with the glistening cranberry glaze. Serve this magnificent dish directly from the baking dish in the center of your table at a family gathering. Its vibrant color and appealing presentation will undoubtedly impress your guests, making it a memorable part of your festive celebration.
Recipe FAQ’s
Absolutely! This versatile recipe can be adapted to almost any firm, flaky fish fillet. Varieties like trout, cod, or hake are excellent choices that would also beautifully complement the sweet and tangy cranberry sauce. Simply follow the same preparation and baking instructions, adjusting the cooking time slightly based on the thickness of your chosen fish. Ensure the fish is cooked through and flakes easily with a fork.
Fresh cranberries are typically a seasonal item, readily available in most grocery stores during November and December, aligning perfectly with the holiday season. You can often find them in major supermarkets such as Waitrose. If fresh cranberries are out of season or hard to find, look for them in the frozen section of stores like Tesco; frozen cranberries work just as well for making the sauce. Many local green grocers also stock them around Christmas time. Don’t hesitate to use frozen if fresh aren’t available!
Yes, absolutely! While homemade cranberry sauce adds a special touch and allows for control over sweetness and ingredients, using a good quality store-bought or jarred cranberry sauce is a convenient alternative. Just be sure to choose one that is not overly sweet, as it might overpower the delicate flavor of the salmon. If using a very thick sauce, you might want to thin it slightly with a tablespoon or two of water or orange juice to ensure it spreads easily over the salmon.
Yes, you can certainly prepare parts of this dish ahead of time to make holiday cooking even smoother. The cranberry sauce can be made up to 2-3 days in advance and stored in an airtight container in the refrigerator. When you’re ready to bake, simply top the salmon with the pre-made sauce. For ultimate convenience, you can even assemble the entire dish – coating the salmon with the sauce – up to 2 days ahead of time. Store the prepared salmon in the baking dish, covered, in the fridge. When ready to cook, simply transfer it directly to the preheated oven, potentially adding a few extra minutes to the baking time if cooking from a very cold state.
The best way to tell if salmon is perfectly cooked is by using an instant-read meat thermometer. Insert it into the thickest part of the fillet; cooked salmon should reach an internal temperature of 145°F (62°C). Visually, the salmon should flake easily with a fork and the flesh should appear opaque throughout, rather than translucent.
Top Tips for Perfect Baked Salmon
Achieving a perfectly cooked and visually appealing cranberry baked salmon is easy with these helpful tips:
- Choose the Right Cut: For the most beautiful presentation, ask your fishmonger for a center-cut salmon fillet. These cuts are typically uniform in thickness, which helps ensure even cooking and an elegant appearance on your serving platter.
- Ensure Proper Doneness: The key to delicious salmon is not to overcook it. The internal temperature of cooked salmon should be 145°F (62°C). If you don’t have an instant-read thermometer, check for doneness by gently flaking the thickest part of the salmon with a fork; it should separate easily and be opaque throughout.
- Utilize Frozen Salmon Effectively: If fresh salmon isn’t available, frozen salmon can be a convenient substitute. Just be sure to thaw it completely in the refrigerator overnight before baking. Pat it dry with paper towels before applying the cranberry sauce to ensure even cooking and a good sear if desired.
- Adjust Cooking Time for Fillet Size: The baking time specified in the recipe is for a larger salmon side. If you are cooking smaller, pre-cut salmon fillets, you will need to reduce the cooking time significantly. Thinner fillets will cook much faster, so start checking for doneness around the 12-15 minute mark to prevent overcooking.
- Enhance Flavor with Fresh Herbs: For an added layer of aroma and flavor, consider tucking a few sprigs of fresh rosemary or thyme around the salmon in the baking dish. These herbs infuse the fish and the cranberry sauce with a wonderful earthy note that complements the festive theme.
- Don’t Waste Leftover Sauce: If you have any extra cranberry sauce, it makes a fantastic condiment for roasted meats, an addition to sandwiches, or even a topping for yogurt or oatmeal.
Preparing Ahead & Storing
Streamlining your holiday cooking is simple with this recipe, thanks to its excellent make-ahead and storage capabilities:
Preparing Ahead:
- Cranberry Sauce: The homemade cranberry sauce is perfect for preparing in advance. You can cook the sauce up to 2-3 days before you plan to bake the salmon. Store it in an airtight container in the refrigerator, allowing its flavors to deepen.
- Assembling the Dish: If you’re really tight on time on the day of your meal, you can assemble the entire dish up to 2 days in advance. Simply spread the cranberry sauce over the salmon fillet, place it in your baking dish, cover it tightly with foil or plastic wrap, and refrigerate. When ready to bake, remove it from the fridge about 15-20 minutes before baking to allow it to come closer to room temperature, then bake as directed.
Storing Cooked Salmon:
- Once the cranberry baked salmon is cooked and cooled, any leftovers can be stored in an airtight container in the refrigerator for up to 2 days. This makes for delicious subsequent meals, perfect for a quick lunch or dinner.
- To reheat, gently warm the salmon in the oven at a lower temperature (around 150°C/300°F) until just heated through to prevent it from drying out. You can also flake the cold salmon into salads or sandwiches for a different kind of leftover enjoyment.
