Servings: 16 falafels
Ingredients
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1 heaped tsp ground coriander
- 1 heaped tsp paprika
- ½ tsp chilli flakes
- 1 400g can black beans, drained and rinsed
- 1 400g can chickpeas, drained and rinsed
- Juice of 1 lime
- Handful fresh parsley
- ⅓ cup chickpea flour (AKA gram or besan flour – other flour should work)
- 1 tbsp tomato puree
Instructions
- Firstly, heat a pan with a drizzle of olive oil.
- Meanwhile, finely chop the red onion and add it to the pan along with the crushed garlic. Cook for about a minute until softening.
- Now, add the drained and rinsed chickpeas, black beans, all the spices (ground coriander, paprika, chilli flakes), along with a pinch of salt and pepper. Fry together for 5 minutes, allowing the flavors to meld.
- Pour the cooked ingredients into a food processor. Add the lime juice, chickpea flour, fresh parsley, and tomato puree. Blitz until you achieve a slightly chunky consistency; do not completely blend until smooth. You may need to stop and press the sides of the mix to create an even consistency.
- Allow the falafel mix to cool for 5 to 10 minutes. This makes it easier to handle and shape.
- While the mixture cools, turn on your oven to 200°C (390°F) and place a baking tray inside to warm up.
- Once the mix has cooled a little, shape it into small balls. Aim for roughly about 16 uniform falafel balls.
- Carefully remove the warm tray from the oven. Drizzle a layer of olive oil onto the tray and evenly place the shaped falafel balls. Place the tray back in the oven and bake for 10 minutes. After 10 minutes, turn the falafels to cook on the other side for another 10 minutes, until golden and crispy.
- If you prefer to fry the falafels for an even crispier result, simply add oil to a deep pot and heat. Fry the falafel balls for a couple of minutes until they are golden brown on all sides.
