- 75 g frozen blueberries

For this recipe, I use this 6×3 inch cheesecake tin. You can experiment with other sizes if you prefer a different shape or serving size.

Begin by soaking your cashews. For the best creamy results, I recommend soaking them overnight in cold water. If you’re short on time, a quick soak of 30 minutes in boiling water will also suffice. Ensure they are fully submerged.

Next, prepare the base. Add the almonds and pitted dates into your food processor. Blend them until they form fine crumbs. Then, add one tablespoon of water and blitz again until the mixture becomes sticky and can be easily pressed together. This creates a perfect, naturally sweet crust.

Lightly grease your cheesecake tin with coconut oil. Transfer the nut and date mixture into the bottom of the tin and press it down firmly and evenly to form the base of your cheesecake. This ensures a compact and delicious foundation.
