- 250 g frozen peas
- 1 tsp cayenne pepper
- 2 tsp paprika
- 1 Pinch of chilli flakes (adjust to taste)
- 3 lemons (2 juiced, 1 for wedges)
- 750 ml vegetable stock (low sodium preferred)
- 400 ml can full-fat coconut milk (for creaminess)
- 400 g brown basmati rice (rinsed)
- 1 tsp saffron threads (lightly crushed and steeped in a tablespoon of hot water, if desired, for maximum color and flavor)
- Salt & Freshly Ground Black Pepper (to taste)
- Fresh coriander, chopped (for garnish)
