  • juice of 2 lemons plus lemon wedges, to serve
  • 350 g paella or risotto rice
  • 1 litre vegetable stock
  • handful of chopped fresh flat leaf parsley, to serve, (optional)

  • Firstly, prepare your ingredients: finely dice the red onion, thoroughly crush the garlic cloves, thinly slice the red bell pepper, and halve the cherry tomatoes. This mise en place ensures a smooth cooking process.
  • Then, heat 2 tablespoons of olive oil in a large, shallow casserole dish or paella pan over a medium heat. A wide surface area is key for even cooking.
  • Add the diced red onion and crushed garlic to the heated oil. Cook for a few minutes, stirring occasionally, until they have softened and become translucent, releasing their sweet aromas into the pan.
